I guess my favorite is fajitas. You won't be able to tell this from the real thing! Start by buying a package of Morningstar "chick-n" strips. You'll also need the following: tortillas, red pepper, onion, garlic, mushrooms, fajita seasoning and sour cream. In a large skillet, fry the chopped red pepper, onion and mushrooms with a few Tablespoons of vegetable or peanut oil. Sprinkle with fajita seasoning to taste. One veggies are tender, remove. Place a
few Tbls. of this onto a warmed flour tortilla and add sour cream. It is fantastic! You can also add some avacado! And they go well when eaten with guacamole flavored tortilla chips on the side!

I love black bean burgers. You take one can of black beans, one small can of chopped green chiles, one egg (or egg substitute. Just something that will work as a binding agent) and throw all of those things in a blender or food processor. You can also add things like pimentos or olives. Blend it until it's smooth, then add enough bread crumbs so that you can mold it into a burger shape. You should be able to make about 5 good sized burgers with this recipe. Then, coat the outside of each burger in a little cornmeal and fry them on each side until they are crispy on the outside. Then they're done. I like mine with avocado, salsa, cheese (or soy cheese) and sour cream (or soy sour cream) on top.
