Vegetarian Carrot Cake
Original recipe yield:
1 - 8 inch round pan
* 3 teaspoons lemon juice
* 1 1/4 cups milk
* 2/3 cup vegetable oil
* 2 teaspoons orange zest
* 3/4 cup packed brown sugar
* 3 teaspoons vanilla extract
* 1 1/2 cups whole wheat flour
* 1 1/2 cups all-purpose flour
* 1 1/2 teaspoons baking powder
* 1 1/2 teaspoons ground cinnamon
* 1/2 teaspoon ground cloves
* 1/2 teaspoon salt
* 1 1/2 cups grated carrots
* 1/2 cup chopped walnuts
1. Preheat oven to 350 degrees F (175 degrees C). Butter an 8 inch springform pan. In a small bowl, add lemon juice to milk. Stir together and let stand 5 minutes. Sift flour, baking powder, cinnamon, cloves and salt together and set aside.
2. In a large bowl, cream oil, orange zest and brown sugar. Add sour milk and vanilla. Add flour mixture and beat until smooth. Stir in the grated carrots and chopped nuts.
3. Pour the batter into an 8 inch springform or other deep 8 inch pan. Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted into the cake comes out clean. Allow to cool.

I take carrots and clean them right before cooking by putting a Brillo type scrub brush in my hand and just make a circle and rub off a bit. It's easier done than written, and you leave most of the outside on where the nutrients are. Cut into bite size chunks and steam briefly in basket or microwave.
The sauce is made by cooking Fresh ginger rounds that you smash like cloves (with the flat of a knife blade) and put into concentrated orange juice which you bring almost to a boil. Add some butter if you want. Toss in the carrots. Simple but good.

Yes you can mush up carrot mix in a little gelatin(plant type I suggest) and let gel in fridge
and U'll have homemade tofu.. much better than the ready made stuff U'd get in the stores!
Another thing.. Veggy dogs.. take the carrots about the size of a weiner par cook them and soak in soya sauce for an hour and half at least
then finish cooking. They will look like the real
thing but they aren't. Serve them in hot dog buns with relish or cheese.. the same stuff you'd use with a regular dog!

Tunisian style carrots - even my meat-obsessed sister and her boyfriend loved them. A little sweet, a little spicy.
Basically all you have to do is throw all of the ingredients together in a pan and saute them.

carrot salad: slice the carrots and boil them, fry them in a soucepan with little oil and add garlic, parsley, cumin and flake almonds (fry for about 5min) add a bit lemon juice.
