As I hate the taste of coconut, coconut milk and coconut cream, I usually substitute these with light cream, after infusing it with a crushed lemongrass stalk, fresh sliced ginger and kaffir lime leaves. The result is much better than coconut anything.

Most CHEFS use evaporated milk instead or to substitute coconut milk.

It depend on the recipe, try to use low fat evaporated milk and coconut essence, but make sure not to heat to high.

You can substitute it with evaporated milk or full cream milk. The latter will make your gravy more watery, though. Another good substitue, especially in curries, is yoghurt.

Evaporated milk and cream for desserts and cooking as they do in Hawaii. It gives a nicer flavor than milk and cream.
