Ridgerunner's Blended Spinach Salad
1 cup pineapple
1 orange
1 pear
1 apple (or a couple carrots)
1/8 slice lemon with peel
1 tbsp ground flaxseed
1 cup frozen blueberries
1 large handful raw spinach (about 8 oz - yes, 1/2 lb!)
First blend the pineapple, orange, pear, apple, lemon and flaxseed to a nice fluid. Add the frozen blueberries and blend them in. Last, add the spinach and blend for 20-30 seconds until smooth. It looks horrible (purplish brown) but tastes delicious! (and you will be surprized how much it "compresses down" with blending - 1/2 lb compresses down to about 1 cup fluid).
I started off just adding spinach to the carrot citrus cocktail we all love, but gradually started adding more fruits. The secret is to have lots of sweet and fluidy fruits to overwhelm the subtle flavor of spinach. You CANNOT taste the spinach - I guarantee it!

CREAMY SPINACH SOUP
2 and a half ounces of Israeli couscous, (or the pasta of your choice)
1 small to medium onion, chopped
1 hot pepper, chopped, (optional)
Salt and pepper to taste
Olive oil as needed
1-2 cloves of garlic, chopped
1 pint chicken broth
1 pound baby spinach
4 oz. heavy cream
Boil the pasta separately from the soup. While the pasta is cooking sweat the onion and hot pepper with salt and pepper in the olive oil. Do not brown the vegetables; merely soften them. Add the garlic and cook for one minute. Add the chicken broth and bring to a boil. Add the spinach in bunches until it all wilts. Add the cream, simmer for a few minutes and add additional salt and pepper if need be. Add the pasta and serve.

I like to make a spinach salad with a cashew-lime dressing. See the first link below.
I also like to make a brown rice, spinach and feta casserole. See the second link below. However, I like to modify this recipe by adding lots of herbs while I'm sauteeing the onions, adding some lemon juice to the stock while I'm cooking the rice, and making a grated parmesan crust for the top.

Spinach curry. LOTS of fresh or frozen spinach, finely chopped (because it will shrink a lot, especially the fresh) sauted with onions- you have to brown the onions first- a bit of tumeric, mild curry powder, garlic salt, mustard powder, olive oil and butter. You have to saute it until it's very soft and mushy. It can be served alongside a lentil curry, or mixed with chickpeas for a complete vegetarian meal.

If you're OK with cheese try spinach lasagna. I can't even eat meat lasagna anymore (I'm not vegetarian, by the way. my dad just makes the BEST spinach lasagna)

Vegan spinach dip with homemade bread. Yum. It's made with Mori-Nu tofu and soy-based "mayonaise". Also raw spinach as a salad.

I love spinach on a sandwich.It's so much better and lettuce.also,spinach is good cooked, and add butter.It's good all by itself.

Instead of lettuce in a typical garden salad, I use spinach once in a while. Also, it is good in pasta.
