well unfortunately i do not have any of my vegan cookie recipes handy, so try this one for vegan chocolate fudge (YUMMY)....
Easy Fudge

Oatmeal Lace Cookies
I'm going to give you the original recipe and then my modifications.
1/2 cup. butter (I use good quality-expeller pressed-coconut oil)
1/2 cup. sugar (organic sugar)
1/3 cup sifted all-purpose flour (organic unbleached all-purpose)
1/4 tsp. salt (seasalt)
1 cup quick cooking oatmeal (organic quick cooking oats)
2 tbsp. milk (rice milk)
Preheat oven to 375. Melt butter in saucepan. Stir in remaining ingredients, mixing well. Drop by teaspoonfuls about 3 inches apart onto greased and floured cookie sheets. Spread thin with spatula. Bake 5 to 7 minutes or until edges are brown. Remove from oven; let stand for 1 minute to firm up. Remove cookies from sheet very carefully with wide spatula. Cookies will be thin and lacy. Cool thoroughly. Yields 3-1/2 dozen.
Okay, I use some expensive stuff. But you don't have to use organic if you choose not too. The reason I added the original is that some may use it in the future who also use quality dairy products. You can replace the coconut oil with another type of oil with a pleasant aroma. Coconut Oil has actually gotten a bad rap-sheet. It is very good for us to consume.
For an ice cream treat. Add some Rice Ice cream to the top and of the cookie and decorate with some shaved vegan chocolate or carob powder. Or drizzle a little syrup on top, or roasted coconut shavings. There is a lot you can do with these little cookies.

Vegan Lemon Sugar Cookie Recipe
This vegan lemon sugar cookie recipe will leave you with wanting more! Unlike other sugar cookie recipes, this vegan cookie is flavorful enough on it's own; no icing is needed.
INGREDIENTS:
2 1/2 cups flour
1/4 tsp salt
1/2 tsp baking soda
2/3 cup sugar + 1/4 cup
1 cup margarine, pre-softened
1/3 cup lemon zest
1/4 cup silken tofu
3 tbsp lemon juice, preferably fresh
PREPARATION:
Preheat the oven to 400ºF.
Sift together the flour, baking soda and salt in a medium sized bowl.
In a separate large bowl, beat together the 2/3 cup sugar, margarine ans lemon zest until smooth and fluffy.
Add the tofu and whip until well mixed.flour, baking soda, and salt. In a large bowl, beat the margarine, the remaining 1 cup of sugar, the remaining 1 tsp. of lemon oil, and the zest with an electric mixer until light and fluffy. Add the tofu and beat until well-blended.
Add the flour mixture to the margarine mixture and stir until well combined.
Form dough into one-inch balls, and roll into the 1/4 cup sugar until well coated. Flatten slightly, and bake for 8-10 minutes, until lightly golden brown.

Classic Vegan Chocolate Chip Cookie Recipe
INGREDIENTS:
2 3/4 cup flour
1 tsp salt
1 tsp baking soda
1 cup margarine (make sure it's vegan!)
3/4 cup brown sugar
3/4 cup sugar
1 tsp vanilla
Ener-G Egg Replacer for 1 egg
12 oz semi-sweet chocolate chips
PREPARATION:
Preheat oven to 350 degrees.
Sift together the flour, salt and baking soda in a large bowl and set aside.
In a separate large bowl, beat together the margarine, sugar, brown sugar, vanilla and egg replacer.
Add the dry ingredients to this and stir until combined well.
Stir in the chocolate chips.
Drop one inch spoonfuls of dough onto cookie sheet. Bake for 8 to 10 minutes, until edges are golden brown.

I'd just like to answer the most recent addendum real quick - chocolate's vegan as long as no milk is added to it. I don't know why people associate veganism with carob. I mean, carob's good... but I'm not so sure I'd remain a vegan if I couldn't have chocolate :)

Nutt Cookies(Sugar Free)
1/2 cup sifted cake flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon (2 packets) Sweet 'N Low®
2 tablespoons orange juice
1/2 teaspoon vanilla extract
2 tablespoons vegetable shortening
2 tablespoons finely chopped walnuts
2 teaspoons grated orange rind
Preheat oven to 400°F.
Grease cookie sheet lightly.
Sift together flour, baking powder and salt.
Blend Sweet 'N Low with combined orange juice and vanilla.
Work shortening with spoon until fluffy and creamy.
Add the liquid ingredients and mix well.
Add the sifted dry ingredients and mix until light.
Add walnuts and orange rind.
Shape dough into roll and wrap in wax paper.
Chill well.
Cut into 12 even slices.
Arrange 2 1/2" apart on cookie sheet.
Bake 12 minutes or until brown around edges.

My fave choc. chip cookie recipe is the one on the back of the semi-sweet Giradelli choc. chips. The chips themselves are dairy free and just sub vegan ingredients. MMMM I can polish off the entire batch in 2 days, or less with some Soy Delicious vanilla ice cream.
