Actually, very few health food stores carry vegan gelatin. Both Vegan Essentials and Food Fight Grocery (online) have vegan gelatin.
If you're looking for a vegan safe jello like yummy, try Kanten. Kanten can be made with any fruit juice and a little sea weed called agar agar.
Kanten is easier to make and sets up much faster than jello.
You can buy agar agar in the Asian section of most stores now. Even Safeway. Look for Eden brand in the little blue bag.
Take 3 cups of juice. Any juice! Put 2 tablespoons of agar agar in it and just leave it for about half an hour. Most "how to's" leave this little nugget of info of and just go straight to boiling. But experience has shown me that soaking the agar means it disperses faster in the boil.
You can put the juice and agar agar in a bowl in the fridge in the morning then go off to work and boil it when you get home for dessert.
anyway... Put the agar agar and juice in a sauce pan. Bring it to a boil then reduce heat and simmer until all the agar agar is dissolved. Anywhere from 5 to 10 minutes. Depends on if you presoak or not.
Kantens are normally not more than an inch high. So use a container that is big enough to spread the kanten out. Ice cube trays work well. Once the mixture is poured into the container, you can add fruit if you like.
It sets up in under an hour.
I highly recommend cherry Kanten! Add a merochino cherries. When ready to serve, top it off with chocolate sauce and Soy Whip. Be sure to read the directions on the can of soy whip!!!
It's super easy and super fast to make. I have found those little silicone ice cube trays make for great kanten molds.

At a health food store or online. The vegan version of gelatin is called agar-agar. It should be very easy to find online. Thats how I get my nutritional yeast.

no how ever you can make it by putting the fruit you want in a pot and cooking it down with sugar.no water and taking the juice from it and refrigerating it should turn into a jellie.
