All purpose sauce - Stir fry's etc
2/3 cup soy sauce
1/2 cup chicken broth
1/3 cup rice wine
3 1/2 tablespoons sugar
1 tablespoon sesame oil
1/4 teaspoon white pepper
2 tablespoons cooking oil
1 tablespoon minced garlic
1 tablespoon minced ginger
2 tablespoons cornstarch
1/4 cup water
In a bowl, combine soy sauce, broth, rice wine, sugar, sesame oil and white pepper.
Dissolve the cornstarch in 1/4 cup water.
Heat a pan over high heat; add the cooking oil, swirling to coat; add the garlic and ginger; cook, stirring, until fragrant, about 15 seconds.
Add the soy sauce mixture; bring to a boil.
Reduce heat to medium and cook for 1 minute.
Add the cornstarch solution and cook, stirring, until the sauce boils and thickens.

Hoisin Sauce - Microwave

Quite a while back, I was visiting my friend Katy, and started flipping through pages of her Kenmore microwave book. At that time I was "playing" with all kinds of Chinese recipes, so I copied this recipe for hoisin sauce. I've had a request to post it here on Zaar.

2 cups 10 min 5 min prep
8 ounces beef broth
4 ounces soy sauce
4 ounces dry sherry
2 tablespoons arrowroot or cornstarch
2 tablespoons molasses
2 tablespoons tomato paste
2 cloves garlic, finely minced
1/2 teaspoon ground ginger
1/8 teaspoon black pepper
Combine all ingredients in a 4 cup glass microwaveable container and stir well.
Cover with plastic and cook on high power for 4 to 4 1/2 minutes or until thickened.
This makes about 1 3/4 cups sauce.

Hoisin Sauce
Ingredients

2 T Peanut butter/black bean pas
1 T Honey/molasses
2 t White vinegar
1/8 t Garlic powder
2 t Sesame seed oil
20 dr Chinese-style hot sauce
1/8 t Pepper
Instructions
The commercial recipe is presumably the black bean paste. I presume they are the same as Mexican/Spanish black beans. Different types of soy, molasses, some of the oil being hot pepper oil, other styles of pepper sauce. All kinds of variations. However, with light soy and honey, the taste of peanut dominates. Simply mix together. At first it does not appear like it will mix but keep at it just a bit longer and you have Hoisin. Letting it rest does not appear to improve the taste noticeably.

Hoisin sauce generally comes out of a bottle. You can buy it from any chinese/oriental store.
If you want to make it, it is made from pureed plum sauce with some soy sauce and sugar added.

2 teaspoons white vinegar
1/8 teaspoon garlic powder
2 teaspoons sesame oil
20 drops chinese hot sauce, habenero or jalepeno
1/8 teaspoon black pepper.
Directions:
Simply mix together.
At first, it does not appear like it will mix but, keep at it just a bit longer and you have.

don't bother - it is so much easier to buy and taste better than anytime i have tried to make it. you can find it in any grocery store in the ethnic isle.
