What I'm wondering is " what daily percentage of this saturated fat is acceptable to function naturally?"

Saturated fat tends to raise blood cholesterol, especially LDL ('bad') cholesterol. Actually, saturated fat raises blood cholesterol more than dietary cholesterol does. Everyone does not respond to saturated fat in the same manner. This raise in LDL has been associated with the progression of heart disease. When LDL levels fall into excess, they have a tendency to become oxidized, which forms plaques inside the wall of arteries. Heart attack or stroke may result from fatty plaques.

Sodium. Some fats are good in moderation so long as it's not trans fats which are bad fats. There are also good and bad cholesterols. Sodium should be taken in small amounts. You are right that too much sodium contributes to high blood pressure.

Saturated fat is real bad for the Heart, the least amount of intake

really bad...and the ones they try to pass off as not cholesterol...as in "0" fat etc are palm oil and coconut oil...stay away from anything that has that in them....

Bad, but its even worse for the arteries. It clogs them up and reduces blood flow leading to complications such as blood clots, strokes and tissue death.

I never let it bother me. With the proper heredity it can play havoc with the arteries, though.
