INGREDIENTS:
1-1/2 pounds mushrooms
3 tablespoons vegetable oil (sesame or sunflower)
2 teaspoons Garlic Puree
6 tablespoons Onion Puree
Akhni Stock or water
1-2 fresh hot peppers, chopped (to taste)
1 tablespoon chopped fresh cilantro leaves
salt to taste
SPICES (GROUND)
1 teaspoon coriander
1 teaspoon cumin
2 teaspoons paprika
1/2 teaspoon turmeric
1 Wash the mushrooms, and only peel them if they look as though they need it. Leave whole, quarter, or thinly slice them.
2 Heat the oil and fry the garlic puree at quite high heat for just 1 minute. Add the onion puree and fry for about 3-5 minutes. They should be golden brown.
3 Make a paste of the spices with a little vegetable stock or water, and add to the onion. Fry for another 5 minutes, then add sufficient water or stock to obtain a thick but fluid mixture. When it is simmering, add the mushrooms and the fresh hot peppers and cilantro. When they are hot, they are ready to serve-and the fresher the better. Add salt to taste.

here are two recipes - i have used them both and they are good
1 ounce Ghee or unsalted butter; (25g)
1 tablespoon Schwartz Medium Madras Curry Powder
2 Cloves garlic - peeled and crushed
3 tablespoon Water
1 pounds Button mushrooms - cleaned; (450g)
2 Spring onions - trimmed and chopped
1 teaspoon Schwartz Coriander Leaf
1 teaspoon Schwartz Sesame Seeds - toasted
¼ teaspoon Salt
Heat the ghee or butter in a frying pan, add the Curry Powder and garlic and cook gently for 1 minute. Stir in the water. Add all the remaining ingredients and cook over a moderate heat, stirring continuously, for 1 -2 minutes, or until the mushrooms are just tender. Do not allow to overcook

Ingredients
Gram Flour - as much as you want or as little as you want
Red Chilli Powder to taste
Salt to taste
Coriander
Onion - any kind
Mushrooms - as much as you want and any type
ginger and garlic - to taste
Potato - optional
Water -
Green Bell Chilli - Optional
Oil/Ghee
Technique
Mix all the ingredients together - adding water a little at a time.
You don't want the mixture lumpy and you don't want it runny either so make sure the mixture just lightly coats the vegetables.
Using a spoon deep fry them until golden brown and serve with yogurt.
THIS ISN'T THE MOST TYPICALLY INDIAN WAY OF MAKING BHAJEES, BUT MY MUM'S BEEN MAKING THEM LIKE THIS FOR YEARS AND THEY REALLY ARE NICE.

Cut the Mushroom into slices.
Put oil in a pan and saute them.
Add salt and spices to your taste.
And it is done.
This is easiest. Addition of peas, or onions and such is optional.

You can mix all of the ingredients together uncooked (melt the butter of course) and make little bhaji balls and put them in the oven for 20-25 mins at 200C/6.
