These three are VERY easy:

Chicken Parmesan
4 skinned, boned chicken breast halves
1 egg, lightly beaten
1/3 cup Italian-seasoned breadcrumbs
2 Tbs butter or margarine
1 3/4 cups spaghetti sauce
1/2 cup shredded mozzarella cheese
1 Tbs grated Parmesan cheese
1 Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness using a meat mallet or rolling pin.
2 Dip chicken in egg; dredge in crumbs.
3 Melt butter in a skillet over medium-high heat; add chicken, and cook 2 minutes on each side or until browned.
4 Pour spaghetti sauce over chicken. Cover, reduce heat, and simmer 10 minutes. Sprinkle with cheeses. Cover and simmer 5 more minutes or until cheese melts. Serve with some pasta and extra sauce.

Angel Hair Pasta with Shrimp and Basil
Freshly grated Parmesan cheese makes it complete.
1/4 cup olive oil, divided
1 (8 ounce) package angel hair pasta
1 tsp chopped garlic
1 lb large shrimp - peeled and deveined
2 (28 ounce) cans Italian-style diced tomatoes, drained
1/2 cup dry white wine
1/4 cup chopped parsley
3 Tbs chopped fresh basil
3 Tbs freshly grated
Parmesan cheese
1 Bring a large pot of water to a boil, and add 1 tablespoon oil. Cook pasta in boiling water until al dente. Place pasta in a colander, and give it a quick rinse with cold water.
2 Heat remaining olive oil in a 10 inch skillet over medium heat. Cook garlic, stirring constantly, until the garlic is tender, about 1 minute. Do not let the garlic burn. Add shrimp, and cook for 3 to 5 minutes. Remove shrimp from the skillet, and set aside.
3 Stir tomatoes, wine, parsley, and basil into the skillet. Continue cooking, stirring occasionally, until liquid is reduced by half, 8 to 12 minutes. Add shrimp, and continue cooking until the shrimp are heated through, about 2 to 3 minutes. Serve the shrimp mixture over the pasta. Sprinkle with Parmesan cheese.

Penne With Sausage And Tomatoes
1 Tbs olive oil
1 medium onion, chopped
4 Italian hot sausages, casings removed
1/4 tsp dried red pepper flakes
1/3 cup dry red wine
1 28-ounce can crushed tomatoes with added puree
2 tsp dried marjoram, crumbled
8 oz penne pasta
Salt and freshly ground pepper
Freshly grated Parmesan or Romano cheese
1 Heat oil in heavy large saucepan over medium heat. Add onion and cook until tender, about 8 minutes. Add sausage and cook until no longer pink, breaking up with fork, about 6 minutes. Stir in pepper flakes. Add wine and boil until absorbed. Mix in crushed tomatoes. Bring to boil, reduce heat and simmer 25 minutes. Stir 2 tablespoons marjoram into sauce.
2 Cook penne in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return penne to pot. Add half of sauce and stir to coat. Season with salt and pepper. Transfer to large bowl. Serve, passing Parmesan separately. (Freeze remaining sauce up to 2 months in covered container.)

Easy, yes... quick... kind of! Annoying prep work, but totally worth it in the end! Get about:

2.5 lbs EACH of Hot and Mild Italian Sausage,
3 Cubanelle Peppers
2 Large white onions, quartered
One or two bell peppers any color other than green.

Cut up all the peppers and onions into thick strips. I like the onions quartered because they tend to shrink. Place the sausage in a single layer in a deep baking dish. Drizzle with olive oil in a zig zag pattern across the sausage and season with garlic salt to taste. Pile the peppers and onions on top. Repeat the olive oil-garlic salt combo. Bake at 400 for 40 minutes.

After 40 minutes, "flip it" - with tongs, find the sausage under all the yummy peppers and onions and place them on top. Bake for about another 30 minutes or until the outside of the sausage looks golden brown.

This recipe is great if you have reflux, or are sensitive to tomatoes. I like to serve the sausage and peppers on a toasted, seeded Italian hoagie roll, or you can serve over your fave pasta! Yum... I just made myself really hungry.

Many are easy but quick? The secret of a good Italian kitchen is to cook/simmer most of the food slowly in order to give it it's great taste.

But never-the-less a quick one is: Spaghetti aglio e olio

For a starter or snack you can make an insalata caprese.

Sliced tomatoes, sliced mozzarella (buffalo is preferable any mozzarella will do), soft butter or bibb lettuce, a few shredds of fresh basil and dash of salt and a drizzle of olive oil...

So yummy. Serve with crusty bread.

Easy Italian Vegetable Pasta Bake

Ingredients
3 cups Mostaccioli, cooked, drained
1 (28 ounce) jar Light pasta sauce
1 (8 ounce) package shredded Mozzarella Cheese
2 cups Thinly sliced mushrooms
2 cups Sliced halved yellow squash
2 cups Sliced halved zucchini

Preparation

1. Mix mostaccioli, sauce, 1 cup of the cheese and vegetables. Spoon into 13x9-inch baking dish. Sprinkle with remaining cheese.

2. Bake at 375 degrees F for 20 to 25 minutes or until thoroughly heated.

Easy Italian Chicken

Serving: 8
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes

4 boneless skinless breasts of chicken
1 can of French cut green beans
approximately 1 1/2 cups Italian salad dressing

1. Put some of the dressing on the bottom of a glass casserole dish.

2. Add the chicken and cover it with the rest of the dressing.

3. Drain the beans and add them to the dish. Cover with lid.

4. Bake in the oven for about 30 minutes on 325 degrees, until the chicken is tender. It will be marinated with the dressing which makes a delicious, quick and easy meal.


Easy Italian-Style Tomato Sauce

2 to 3 tablespoons olive oil
2 medium onions
1 medium green pepper, chopped
1 clove garlic, minced
1 tablespoon salt
1/4 teaspoon pepper
1 can (6 ounces) tomato paste
2 cans (14.5 ounces each) diced or crushed tomatoes
1 teaspoon dried leaf oregano
1/2 cup grated Parmesan cheese

Heat oil; sauté onions, pepper and garlic in the oil until tender. Add salt, pepper, tomato paste, tomatoes, and oregano. Simmer for 30 minutes, stirring occasionally. Stir in cheese before serving or serve cheese separately. Serve with hot cooked and drained spaghetti or similar pasta. Serves 6 to 8. Meat version: Sauté 1/2 pound of lean ground beef with the onions, peppers and garlic until browned.


Easy Lasagna

Ingredients
1 pkg Lasagna noodles
1 Medium jar of spaghetti sauce
1 bag Shredded mozarella cheese
1 bag Shredded Italian mix cheese
2 lbs Lean hamburger meat
Garlic Salt

Preparation
Cook lasagna noodles according to directions on package. Brown the hamburger meat and a dash or two of garlic salt. Preheat oven to 350. Mix hamburger meat with spaghetti sauce and put thin layer on bottom of 9x13 baking dish. Add layer of pasta noodles. Add layer of spaghetti sauce mixture, mozarella, Italian mix, then noodles. Repeat until dish is full. Ending with a thin layer of cheese. Bake for about 45 minutes. Remove from oven and let cool for 10 minutes before cutting.
