Recipe: Bean Salad Pockets

Servings: 4
Preparation Time: 5 min.
Cooking Time: 0 min.

Ingredients:
1 Lbs. canned black beans, rinsed and drained
2 Tbs. chopped pimento
2 Tbs. parsley
4 tsp. olive oil
2 Tbs. lemon juice
4-1/2 tsp. water
1/4 tsp. dry mustard
1 clove garlic, minced
1/4 tsp. salt (optional), or to taste
4 whole wheat pita, warm and cut in half

Cooking Directions:
Combine beans, pimento and parsley in a salad bowl. Combine remaining ingredients, except pitas, in a jar with a tight-fitting lid. Add pepper to taste. Shake vigorously. Pour dressing over beans. Set aside 30 minutes. Divide equally and stuff into pita breads.

Recipe: Bean and Cheese Sandwiches

Ingredients:
1 Lbs. canned black beans, drained
1/4 cup recipe-ready crushed tomatoes
1/4 tsp. ground cumin
4 hoagy sandwich bun, cut in half lengthwise
3/4 cup shredded cheddar cheese
1 cup salsa

Cooking Directions:
Preheat oven to 400° F. Combine beans, tomatoes and cumin in a blender or food processor. Process until smooth. Transfer to a heavy nonstick skillet over medium heat. Stir 2-3 minutes or until hot. Remove from heat and set aside. Remove a small amount of center of each bread half to make a shallow hollow and divide beans among sandwich halves. Sprinkle with cheese. Place sandwiches on a baking sheet and bake in oven about 5 minutes or until cheese is melted. Serve sandwiches with salsa.

Make a marinated 5 bean salad on Sunday, then just put some in a container in the morning for lunch and have it with some toast.

Toast and peanut butter and an apple.

Sandwich.

Stirfry made the previous evening.

Fry cubed tofu, scallions, carrot disks, cut green beans, mushrooms and broccoli with minced garlic and ginger. Pour the sauce mix when it's just tender. You can vary the taste of sauce mix by combining various ingredients.

Sauces:
1. Fake oyster sauce (made with shiitake mushrooms) with sesame seeds
2. Fake oyster with spicy plum or pineapple or passionafruit sauce
3. tamarind with ground peanuts
4. Teriyaki with sesame seeds
5. Szechuan sauce
6. Chili garlic with fake oyster or pineapple

Chopping veggies, mixing the sauce and stirfrying will tkae at most 20 minutes.

then just put them in the microwave.Then
get some frozen fries for the drink you
should get diet coke/Pepsi then you
will have a lot of energy it happen to me.
