STIR FRY SWEET & SOUR CHICKEN

3 boneless skinless chicken breast
sesame seeds (optional)
1 green bell pepper (julienned)
1 clove of garlic (chopped)
2 1/2 tbsp. of coconut oil
1 jar of La Choy sweet and sour sauce

Cube chicken into desired chuncks; set aside. Heat oil until melted over low heat. Add sesame seeds and chopped garlic, stir to mix together, turn up heat to med-hi, and add chicken.
Stir fry until chicken is thoroughly cooked, then add bell pepper and sweet and sour sauce. Stir and turn down heat to low.

Cover and simmer for about 10 minutes until bell pepper is soft and tender. Serves 2-3.

well, you can buy the sweet and sour sauce in a grocery store; that is easy. as for the chicken part just get some chicken tenderloin and slice it into chunks. make tempura batter either through a mix, also available at the store, or find a recipe online like at food tv. this will be very easy as well. in a skillet heat plenty of oil to 250 degrees, drop the chicken in the batter, the battered chicken in the hot oil and cook until golden brown. serve right off.

Peanut oil/canola oil
1 lb. chicken breast, sliced thinly
1 c. sliced celery
1 c. bok choy (Chinese cabbage), chopped
1 med. onion, diced
1-2 carrots, shredded
1 red, yellow or green pepper, diced
1/2 tsp. grated fresh ginger or 1/4 tsp. dried ginger
1 clove garlic, minced

SAUCE:

1/3 c. rice wine vinegar
1/2 c. brown sugar
Salt, pepper to taste
1/4 tsp. dried ginger
1/2 c. ketchup
Pinch of garlic powder
1 c. chicken stock
2 tbsp. cornstarch

Have all ingredients chopped and ready to go. In a deep skillet or wok, heat 2 tablespoons oil over high heat. Add all vegetables and ginger. Chow (stir-fry) quickly until onion is cooked and translucent. Remove to bowl.
Add 2 tablespoons oil to wok; heat. Add chicken and chow until no longer pink on outside (5-7 minutes).

Mix in separate bowl sauce ingredients, making sure to mix cornstarch thoroughly. To chicken in wok, add vegetables and sauce mix. Cook over low heat until cornstarch is cooked, about 7 minutes, or until sauce is slightly thickened. Serve over hot cooked white rice.

Try a good brand frozen bag in the veggi section just add the chick.
Oriental food is ok if you want three shelfs full of leftover food items.
