Spicy Italian sausage. I LOVE collard greens with pasta and this red sauce I make (thats rather tangy). Excellent!

Just about any meat in a "southern" recipe.
Especially yummy is barbecued chicken, but collard greens are fantastic with all foods. It's very important to have cornbread with them, though.

Wow great question. Usually collards are cook with fat back to enhance the flavor. Fat back is like really fatty bacon, since it comes from a pig. So the logical answer just might be pork. Try some ham hocks or a good old pork chop, deep fried of course.

Any kind of pork suits me best. That means... bacon, pork chops, pork loin roast... with sliced apples or applesauce on the side, and if you like it, some saurkraut. Very healthy!
