that does not contain wheat, eggs, soy, dairy, peanuts or meat or poultry of any kind. I have food allergies and I am bored to tears with my limited diet. Hoping to find something from other cultures. Seafood and fish are ok. Thanks

Sweet/sour cucumbers . Slice cucumbers very thin, and soak them overnight (in the fridge) in a mixture of vinegar, sugar, salt, pepper, and dill. The proportion of vinegar to sugar depends on tour own personal taste. Start with small amounts and keep taste-testing as you mix until the flavor pleases your palate. My Lithuanian Grandmother used to add huge dollops of sour cream to the finished liquid. But I never have any sour cream on hand, so I've usually made this without it, and it tastes okay to me. Has a nice sharp tangy mouth-puckering effect, leaves the taste buds feeling clean! Spices up a bland plate. (When I didn't happen to have cucumbers, I've tried this with whatever veggies I had on hand. Works well with small bits of broccoli, snap peas, and shredded cabbage.)

Lentil Pancakes

Ingredients (get from Indian grocery store)
1 Cup Besan (Chickpea Flour)
1 Carrot Grated
1 Green Chilli: Finely Chopped
1/2 Medium Onion Finely Chopped
Fresh Corriander: Finely Chopped
3 inches bottle gourd grated
Water to add
Salt and Red Chillies to taste.
Oil to fry

Method:
add all the ingredients together except water.
Add water slowly and make the batter to a consistency of soup./ crepes batter.
Beat the batter for 2 mins with hand.
Heat a griddle.
Put 1 tsp oil over it and spread it. Then lightly remove the excess oil by wiping with a towel.
Put one Big ladel of batter and spread it on griddle.
The heat should be medium so that it doesn't burn.
put 1 tsp oil on the corners of the pancake.
Once it gets browned from one side turn it over and cook from the other side.
Put one more tsp of oil.
Once brown spots appear take it off from the griddle.
Serve hot with tomato ketchup or tomato salsa/ hot sauce or corriander chutney.

Hmm, how about this mushroom risotto?
Mushroom Risotto (from “The essential Vegetarian Cookbook”)

4 C light mushroom broth or vegetable broth (I use knorr vegetable bullion cubes)
2 tsp olive oil
3 scallions, white part only, minced
1 shallot or small red or white onion, minced
1 cup chopped mixed mushrooms
1 cup Arborio rice
1 tablespoon balsamic or red wine vinegar (I use balsamic)

Pour the broth into a saucepan and bring to a simmer. Keep broth simmering.

Meanwhile, sauté scallions and shallot in butter until softened, about 6 minutes. Add mushrooms and sauté until they darken and begin to release their liquid. Add the rice and stir to coat with the vegetables, about 1 minute. Turn up the heat to medium-high and add the vinegar. Stir until the liquid has evaporated, about 1 minute.

Add about a cup of broth to the rice. Stir over medium heat until broth has been absorbed, about 5 minutes. Continue adding ½ cup of broth at a time, stirring each time until liquid has been absorbed. This should take about half an hour total.

Sonoran Ceviche

Ceviche prepared Gulf of California style!!

Ingredients:
Fish (can be Tilapia, snapper, black bass.....this last is excellent for Ceviche)
1 L of Clamato
1 can of V8 juice
2 lbs limes
1 ball Onion
1 or 2 tomatoes
Sea Salt

1- Coat your choice of fish filet with a generous layer of salt, both sides and put in the freezer for at least 3 hours.

2- Cut the fish into 1/4" inch squares aprox. Put in a bowl, add water and quickly drain (just once and quickly, this step is only to remove the excess salt, you don't want to remove all of it). Slice the onion and tomato and mix it with the fish

3- Pour lime juice, I put 2 lbs on the ingredient list, but you have to add enough lemon juice to have an equal volume of juice and fish, the fish has to be all submerged in lemon juice.

4- Refrigerate for at last 2 hours, I usually prepare this at night and leave overnight....it tastes alot better!!!

5- Drain around 90% of the lime juice, add the bottle of Clamato and the can of V8 juice...mix.

6- Season with pepper, serve on cocktail glass, add ketchup and hot sauce to your liking and eat with crackers.

1. Place noodles in pot of boiling water; cover. Remove from heat and let stand for 5 minutes. Drain.

2. Meanwhile, in a small mixing bowl combine sugar, oil, soy sauce, balsamic vinegar, and salt. Blend with a whisk and pour sauce over noodles.

3. Mix cilantro with green onions and jalapenos. Combine with noodles
( depends on what noodles you get, just don't get wheat or egg noodles)

OK, this one is Slovakian. It's called Bryndzove halusky (Dumplings with sheep cheese)

Ingredients: 2-3 Potatoes, Flour 4-5 tbsp, Salt, 1 egg

Instructions: Peel potatoes and finely shred them.
Add egg and flour. Make a dough that is not too tough but not to watery. You may use more or less flour or add a little bit of water if it is too tough. Add 1 tsp of salt.
Boil water w 2 tbsp of salt. Use teaspoon to drop a little bit of the dough into the boiling water. Be sure the water is always boiling.
When halusky are done they will float on top of the water, Pick them out with a strainer.
Mix with bryndza (sheep cheese) or Feta Cheese mixed with cream cheese. Cut up little pieces of bacon and fry them. Sprinkle on the top of halusky and cheese.

1 cup tamari or soy sauce
1/2 cup sake
1/2 cup unbleached cane sugar
2 Tbs. fresh ginger, minced
3 cloves garlic, minced or pressed
1/4 cup sesame oil
2 tsp. dried mustard
2 lbs. fish

1. Combine all ingredients except for fish in a small saucepan and heat to boiling. Simmer for 10 minutes.

2. While the marinade is simmering, . Slice each fish into chuncks. Marinade over night

2 Tbs. canola oil
2 medium onions, cut in wedges
3 red or yellow bell peppers, cut in strips
8 oz. mushrooms, cut in half
3 large tomatoes, cut in wedges

3. Heat oil in large saucepan. Sauté onions for 3 minutes. Add peppers and mushrooms and sauté until onions are translucent. Divide vegetables between two baking dishes. Divide tomatoes . Stir to combine.( add fish)

4. Bake uncovered at 350° for about 35 minutes or until bubbly and beginning to brown. Serves 4 to 6.

There are plenty of vegan recipes of all ethnicities that have no soy , wheat or peanuts and of course no animal products. Just pick a particular recipe title and search for it, including the parameters "vegan recipe".

Chunky Haddock Gumbo
* ½ green pepper, chopped
* ½ cup each basil, oregano and thyme
* 2 carrots, diced
* 2 tsp Cajun seasoning
* 1 stalk celery, chopped
* 1 bay leaf
* 2 onions, chopped
* ¼ cup uncooked long grain rice
* 1 (400 g) pkg. HIGH LINER Frozen Haddock Fillets, thawed
* 1 tsp salt
* 2 cloves garlic, minced
* 1 tbsp butter
* 1 (28 oz/796 mL) can diced tomatoes, with liquid

1 Cut thawed fish block into chunks; set aside.
2 In large saucepan, cook onions, celery, carrots, green pepper and garlic in butter until softened, about 5 minutes.
3 Add remaining ingredients (except fish) and 3 cups/750 mL water and bring to a boil.
4 Reduce heat, cover and simmer for 20 minutes or until vegetables are tender and rice is cooked.
5 Add fish and cook 5 minutes longer or until fish is opaque.
6 Remove bay leaf and serve with crusty bread.
(omit butter, subtitute with vegetable oil, to saute ingredients if you dont want to use butter)

Spicy Citrus Thai Salad
1/2 cup orange juice, fresh-squeezed
1/2 cup lime juice, fresh-squeezed
2 tsp. soy sauce
ground pepper (to taste)
1 Tbs. chilies (such as serrano, jalapeño, etc.), minced
2 tsp. garlic, minced
1 tsp. ginger, minced
3 Tbs. vegetable oil
1 head romaine lettuce, torn into bite-sized pieces
1 tomato, chopped into bite-sized chunks
1 large cucumber, peeled and cut into rounds
4 green onions, thin-sliced
1/3 cup coarsely chopped fresh cilantro leaves

Directions:

1. In a jar with a lid, combine orange juice, lime juice, soy sauce, and pepper; shake well.
2. Add chilies, garlic, ginger, and oil; shake well.
3. In a large bowl, combine the remaining salad ingredients and mix well to combine.
4. Drizzle on about ½ cup of the dressing, toss well and serve immediately.
