I'm going to assume that you're a vegetarian, not a vegan. My apologies if I'm wrong.
These are pretty good fillings for tacos:
Grill or sautee green and red peppers, onions, and some minced garlic. Top with a dollop of sour cream with taco seasoning added to taste.
Sharp Cheddar cheese slices, peeled and sliced apple, and apple butter to moisten.
Pimento cheese, a little diced onion, and tomato slices
Coleslaw, apple slices, and Monterey Jack cheese cubes
You can put last night's leftover cold veggies in a taco and moisten them with your favorite salad dressing. And don't forget to try peanut butter and apple slices!

Here's how I make tacos. I'm vegan. Cook a bag of lentils. Rinse and sort first. Then boil for about 20 minutes. No need to soak. Then drain the water when done. Then add one regular sized can of tomato sauce. Add 1/2 to 1 package of taco seasoning (make sure to read the ingredients label because I have learned that many taco seasonings are not vegan). I think I use PACE but I can't remember. Stir it up and heat. That's it. It is really easy, but also very good! Try it. My husband likes it too and he's not a real fan of lentils. Add your toppings: lettuce, tomato, onion, etc..

Come on people! Fish and chicken is neither vegetarian nor vegan.
You can marinate, slice and grill portobella mushrooms the same way you would steak for fahitas. Those make excellent tacos.
You can make taco meat from TVP as someone else suggested.
Seitan can be cooked up like shredded beef for taco filling.

Any nice combo of your favorite veggies. I like onion, green and red peppers, and mushrooms, cooked up with taco seasoning and mixed with brown rice. Lots of hot sauce. The rice really is just filler, but it tastes good. I have also cooked the veggies up with fajita seasoning, which is a little different tasting, but good. I like white corn soft shells for these.

I know you are in the Vegetarian/Vegan section but you don't actually say you are a vegetarian. If not, here's a chicken taco recipe from cooks.com:
CHICKEN TACOS
3 c. coarsely chopped or shredded (pulled) simmered chicken
1 onion, chopped
1/2 green pepper, chopped
1 1/2 tsp. salt
1/8 tsp. pepper
1 1/2 tsp. chili powder
1 (8 oz.) can tomato sauce
8 oz. water
12 taco shells
1 c. lettuce cut into strips
1 tomato, chopped
1/2 c. grated or shredded Cheddar cheese
Salsa Verde Cruda (see recipe)
In large skillet, mix together chicken, onion, green pepper, salt, pepper, chili powder, tomato sauce and water. Cook covered over low heat for 15 minutes. Cook, uncovered until sauce is moist but not wet enough to soak through the taco shells, stirring occasionally. To quickly reduce moisture content, spoon out the excess liquid. Oven heat the taco shells and fill lower 3/4 with chicken mixture and the remainder with the tomatoes, cheese and lettuce. Top with Salsa Verde Cruda. Makes 12 tacos, 6 servings.
SALSA VERDE CRUDA
4 lg. or 6 med. tomatillos
1/2 med. onion
1 med. clove of garlic, peeled
1 1/2 tbsp. seeded minced serrano green peppers
Fresh cilantro, 2 lg. sprigs
Salt
Remove husk, wash, core and coarsely chop tomatillos, chop onion, mince garlic, seed and mince serrano peppers, mince or cut with scissors the cilantro (exclude stems). Salt to taste and mix. Chop in manual food chopper until some liquid forms and the sauce has a loose consistency. Serve.
Note: The sauce loses the cilantro flavor, becomes soggy and the texture breaks down when standing for a while.

you need to use the TVP, i'm uncertain the way you're able to make it, consistent with probability only mixture it up with the taco seasoning. Or use beans, or Yves Veggie floor around. purchase vegan 'cheese' in case you like... pass the bitter cream of course, and shipment it with greens.

Have you tried TVP? Heat it with some taco sauce and add some spanish rice, it's very dense and filling that way. Top with onions, lettuce, diced tomato, guacamole and shredded cheese (if you eat milk products).

how about the bocca meat.. it kinda looks like beef.. i have not tried it yet ..but i like the burgers and next time i am making taco i want to give it a go...also i saw some shreeded veggie chesse
