Boneless wings
1 cup all-purpose flour
2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 egg
1 cup milk
2 chicken breast fillets
4-6 cups vegetable oil
1/4 cup hot sauce (Crystal or Frank's Louisiana)
1 tablespoon margarine
On the side
bleu cheese salad dressing (for dipping)
celery ribs
Combine flour, salt, peppers and paprika in a medium bowl.
In another small bowl, whisk together egg and milk.
Slice each chicken breast into 6 pieces.
Preheat 4-6 cups of vegetable oil in a deep fryer to 375 degrees.
One or two at a time, dip each piece of chicken into the egg mixture, then into the breading blend; then repeat the process so that each piece of chicken is double-coated.
When all chicken pieces have been breaded, arrange them on a plate and chill for 15 minutes.
When the chicken is done resting, drop each piece into the hot oil and fry for 5-6 minutes or until each piece is browned.
As chicken fries, combine the hot sauce and margarine in a small bowl.
Microwave sauce for 20-30 seconds or just until the margarine is melted, then stir to combine.
You can also use a small saucepan for this step.
Just combine the hot sauce and margarine in the saucepan over low heat and stir until margarine is melted and ingredients are blended.
When chicken pieces are done frying, remove them to a plate lined with a couple paper towels.
Place the chicken pieces into a covered container such as a large jar with a lid.
Pour the sauce over the chicken in the container, cover, and then shake gently until each piece of chicken is coated with sauce.
Pour the chicken onto a plate and serve the dish with bleu cheese dressing and sliced celery on the side.
Spinach Dip
1 (10 ounce) package spinach, thawed and drained
1 (12 ounce) can water-packed artichoke hearts, drained
2 cups mayonnaise
1 (8 ounce) package cream cheese, softened
1 onion, small diced
2 garlic cloves, minced
2 cups parmesan cheese, grated
4 tablespoons parmesan cheese, grated
1/4 teaspoon black pepper
1 teaspoon paprika
Preheat oven to 350 degrees.
Mix all ingrediants except reserved parmesan cheese and paprika.
spread into a 9x9 baking dish.
top with reserved parmesan cheese and paprika.
Bake until bubbly and lightly browned on top approximately 30 minutes.
Meatballs
1 1/2 lbs ground veal or ground beef or ground pork (or combination)
1 cup seasoned bread crumbs
1/2 cup chili sauce
1 egg
1/4 cup minced onions
2 tablespoons chopped parsley
1 1/2 teaspoons salt
1/2 teaspoon Tabasco sauce
1/2 teaspoon crushed garlic
3 tablespoons butter or margarine
Saute onion until clear in appearance.
In a large bowl combine ground meat, bread crumbs, chili sauce, egg, onion, parsley, salt, Tabasco and garlic.
Shape meat into balls one inch in diameter.
Pan fry a few meat balls at a time in butter.
Transfer to chafing dish.
Serve with food picks.

I heard this idea today and thought it sounded like a good appetizer/snack. It also sounds pretty easy to make.
Mini Fish Tacos:
Fry up some fish sticks and wrap each one in a soft flour tortilla (if you can't find mini tortillas, you will have to cut regular sized tortillas to the right size). Top them with a pink chili mayo sauce (recipe below), shredded lettuce, and either chopped tomatos or pico de gallo. Enjoy!
Pink Chili Mayo:
1 1/2 cups mayonnaise
1 1/2 cups sour cream
2 canned chipotle peppers in adobo sauce
Juice 1/2 lime
Kosher salt and freshly ground black pepper
Put the mayonnaise, sour cream, peppers, and lime juice in a blender and process to a puree. Refrigerate the mayo for 1/2 hour to let the flavors to blend; taste and adjust seasoning with salt and pepper.

Everyone has such great ideas!
So i am just going to throw in a great dip or at least two of them...
Cube up some Velveeta cheese (the large log) and put it in a crock pot. Add some milk (about a cup), a regular jar of salsa. Put aside. In a frying pan, brown some ground meat and some sausage (you can use either mild or spicy, depending on your taste), drain it and then put it in with the Velveeta mixture. Turn the crock pot and let it melt the cheese. Mix it occasionally as it melts down. You can eat it with crackers best with corn chips!

Probably one of the most popular themes is Mexican. Nachos are almost always involved. Simply stack chips on a plate layering cheddar and mozzerella cheese betweent he chips and add chopped peppers, onions, black olives, beans, whatever you'd like. Sour cream, salsa, and guac., on the side.
Then there is make your own burritos. Have ground burger or chicken options as well as the lettuce, tomato, shredded cheese, and let them put them together.
Then there is always Queso which is half velvetta cheese half salsa microwaved till melted, and used to dip nacho chips.
Stuffed mushrooms with feta cheese and basil, s&p are also a good easy finger food.
Quasadias. Just a soft shell taco with cheese and whatever filling you'd like topped with another shell and backed and cut in wedges.
Mexican pizza, soft shell taco with salsa smeared on it, mozz cheese on top of that, and any toppings you want, back until crisp and cheese is melted, cut in wedges.
Buffalo wings are always popular, experiment with different sauces instead of the typical.

"Touch Down" Taco Dip
1 can refried beans
I bar Philly cream cheese
1 cup sour cream
2 tbsp taco seasoning
1 clove minced garlic
shredded cheddar
Spread can of refried beans into bottom of casserole dish.
Combine Philly, sourcream, taco seasoning, and minced garlic.
Spread Philly mixture on top of beans.
Sprinkle with cheese and top with diced tomatoes, red onions, black olives or whatever you like.
Bake until cheese is melted and beans are heated through.
Serve with tortilla chips.
Whenever I make this I never have leftovers.

Portabella Skins
Ingredients:
4 portabella mushrooms
1 tbsp. olive oil
1/4 tsp. salt
1/8 tsp. pepper
2/3 cup fat-free shredded cheddar cheese
2 slices turkey bacon; crisply cooked (with nonstick spray) and crumbled
1 small tomato; seeded and chopped
1 tbsp. minced fresh chives
Directions:
Preheat oven to 450. Line a baking sheet with foil and spray lightly with cooking spray; set aside. Wipe mushrooms clean with a moist paper towel; let dry. Brush mushroom caps and edges with oil. Sprinkle stem-side with salt and pepper and place, rounded side down, on baking sheet. Divide cheese among mushroom caps and bake 10 minutes, or until cheese begins to melt and edges begin to brown. Remove baking sheet from oven and sprinkle bacon, tomato and chives over mushrooms. Return baking sheet to oven and cook an additional 5 minutes, or until cheese is melted and mushrooms are hot. If desired, cut into wedges and serve with toothpicks. Serves 4!

MAke a pseudo Primanti Brothers sandwich. A great sanwich with coleslaw and fries on it. It's a legend in Pittsburgh. I like the Roethlisberger idea too...do like mini cheeseburgers.
