Wow, where to start?! I have been vegetarian for three years and, honestly, there are so many options, I can't decide which to suggest first. You might want to start with meat substitutes, like veggie burgers, veggie turkey, and of course, tofu.

I personally like Stir Fry with Tofu.
But thats a meal to make.
You could try meat-substitute which sometimes contains eggs, and Morningstar offers veggie burgers,wraps,chicken nuggets and all sorts of stuff that are pretty yummy. I am a lact-sometimes ovo vegetarian, and I love alot of vegan stuff, so I've tasted it all.
Amy's Natural Pizza is AWESOME, and meat-free.
Or you could try my personal recipe.
(I'm sure alot of people have done it too)
What you need:
1 lb tofu (pressed)
Man-which sauce in a can
A dash of Cumin
A dash of garlic powder
(all for ease)
Take the tofu out of the packaging, and put it on tea towels or paper towels, and dab it dry. Then put like a heavy plate or something moderately sized after you wrap it in the paper towel like meat (yuck) on top to drain the water.
Get out a skillet drizzle it with EVOO( extra virgin olive oil) and crumble it in the pan.
After its a darker color and you know its cooked, add the other ingredients and enjoy.
You can put it on rye,wheat or whatever bread you like.

Textured Vegetable Protien or TVP, Pasta, Mushrooms, Rice, Caro, Bread (Wholemeal, RYE - the darker the better) Fruit, Vegetables and any canned soya products like soya chunks, sausages etc, and they also make non dairy cheeses now.

2) Try hot piping minestrone soup the
Italian style.
3) Next time you go Chinese ask for
vegetable dishes, like choy, chinese
mushrooms, snow peas and broccoli.
Try them with oyster sauce.
