Here's one for a Superbowl party:
1 can vegetarian chili (Try Amy's or Hormel brand vegetarian chili)
1 container Tofutti cream cheese (Tofutti brand cream cheese is a vegan cream cheese substitute that is fairly easy to find in most health foods stores and well stocked grocers.)
PREPARATION:
Open can. Open cream cheese. Combine well. Serve with chips. It couldn't be simpler and it couldn't be tastier.

Hi Silverrose,
Here is one I love---get Swiss chard (similar to spinach or collard greens), chopped garlic, scallions and some firm tofu. Cut the tofu into small cubes. Put the tofu in a frying pan with some olive or sesame oil along with the chopped garlic and slice up the scallions (small green onions) and throw those in too. Once it starts to brown, throw in the chard (I normally cut the stems off first, but some of my friends like the stems) cover and just let it simmer until it is cooked (the same texture as spinach when cooked)--YUMMY!! You can add some chopped tomatoes if you like as well.
One that is not quite as easy, but just as good is garbanzo beans (I like them out of the can because they cook faster), chopped tomatoes, tofu (cut into bite size pieces again) and curry powder---I mix this one up a little by adding black beans sometimes or chard at other times, you can put this over rice or just eat in a tortilla. Fantastic, quick and easy!
A good place to go is vegweb.com, Peta.com (they even have shopping lists for every aisle) or vegetariantimes.com (some of these might be duplicate suggestions from other responders as well).
Good luck and if all else fails, join a veg group and you can get a lot of suggestions from them as well, I know I trade a lot of recipes with my sister and my daughter's friends, we are always trying something new.

Most fruits and veggies are super easy to grill. Try them in different ways - eg. kebobs, sliced right on the grill, mixed together in a veggie basket and grilled indirectly. The flavours vary depending on technique, and there's so many options. Eggplant grilled with some sea salt and olive oil is surprisingly "meaty". Portobello mushrooms, brushed will olive oil, some spices and a splash of balsamic vinegar can be a great replacement on a bun for burgers. Grilled pineapple makes an awesome dessert too! Tofu grills up very easily and is so tasty. I just marinate extra firm tofu in my favourite sauce for an hour (I find the brand I use doesn't need draining), cut into thick slices, and grill directly. Summer is also a great time to make veggie-laden salads. Try different grains or pasta mixed with chopped peppers, cucumber, tomato, olives. Add beans or legumes for more fibre and protein. We almost always have a big bowl of some kind of this kind of salad in the fridge - today is israeli couscous, red pepper, yellow, pepper, black olives, green onions, chives, cucumber, celery, mixed with a grapeseed oil/basil/grapefruit juice/honey dressing I quickly whipped up. On the weekend, it was brown rice spirals with broccoli and peppers and a veganiase dressing. The only limit is your imagination! Try grains that you would normally have warm - brown rice, quinoa, millet and couscous all make awesome cold salads. You can easily make summer type wraps with lots of different sliced veggies, and won't miss the meat at all. If you're feeling adventurous, try some of the grilled tofu in there, or buy/make some seitan. Seitan grills up beautifully as well, and can be fed to the most hard-core meat eater pretty convincingly as meat. Another easy thing to do is hollow out zucchini or peppers, and fill with brown rice, the zucchini and pepper guts, garlic, black beans, and tomato sauce. Grill indirectly. You can top with soy cheese or cheese if you like. Simple, and very yummy.

I just wanted to say that the "Veggie Burger" from BK is not VEGAN and if you goto their website and look up the nutritional facts on the "veggie burger" you will see that it says that it is not VEGAN. As it contains whey, eggs.
As far as a "quick" recipe. Salad is always a quick fix.
Happy Hunting

Veggie sub from subway w/ no cheese or mayo. Veggie whopper from BK same way, Cambell's Tomato soup w/veggie hot dogs cut up or saltines. Pasta (careful some has egg), rice, some chinese food, veggie fajitas. Go to peta's website and they have a list of common grocery store food "I Can't Belive It's Vegan". Good for you and good luck!!!

I scrape out the in side the potatoe part(put in med bowl)add enough milk to make them creamy as i mash them. I also put salt pepper to taste ad some butter. Then i put the potatoes back into the shells and i place a slice or graded cheese on top. I place them back in the oven to heat back up and melt the cheese.
