Loaded "Baked Potato" Soup

Makes: 4 servings, about 1 cup each
1 lb. baking potatoes, cut into cubes (about 3 cups)
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup milk
3 slices OSCAR MAYER Bacon, cooked, crumbled and divided
1 cup KRAFT Shredded Cheddar Cheese, divided
2 Tbsp. sliced green onions, divided
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
PLACE cubed pototoes in large microwaveable bowl; microwave on HIGH 5 min., stirring after 2-1/2 min. Add broth and milk to bowl; stir. Microwave on HIGH 10 min., stirring after 5 min. Crush potatoes with a potato masher.
RESERVE 2 Tbsp. each of the bacon and cheese and 1 Tbsp. of the onions for topping; set aside. Add remaining bacon, cheese and onions to soup.
SERVE topped with reserved bacon, cheese, onions and sour cream.

Serve this hearty soup with a quick bagged green salad tossed with your favorite KRAFT Dressing and a whole-wheat roll.
Variation
Peel potatoes before cubing, if desired.

Not sure if you have cheese kicking around but you can always omit it....
French Onion is easy and not alot is needed...........
2 cans beef broth
1 can beef consomme
2 large onions, sliced 1/4" thick
2 tablespoons butter
2 cloves pressed garlic
1 dash Worcestershire sauce
1 cup shredded swiss cheese
4 slices toasted French bread
Place onions and butter in saucepan.
Saute on medium heat until onions are tender.
add garlic and saute 1-2 minutes (don't let garlic burn).
Add beef broth, consume, and Woschershire sauce.
Bring to a boil for 1 minute.
Take ovenproof bowls (I use oversized coffee mugs) and place 0.125 cup of cheese in bottom of each bowl.
Fill bowl with soup leaving room at the top.
Place toasted French bread on top.
Top with 0.125 cup Swiss cheese.
Place under broiler until cheese is bubbly.
Serve immediately.
Caution- Bowls will be hot!
Or an Easy Veg Soup
6 cups boiling water
3 chicken bouillon cubes
1 onion, chopped
1 potato, cut into very small cubes
2 large tomatoes, pureed (or equal amount tomato sauce)
1 1/2 cups frozen peas
1 1/2 cups frozen corn
1 cup frozen lima beans
1 cup carrots
1 cup frozen green beans
1/2 head cabbage, shredded
salt, to taste
pepper, to taste
1 teaspoon ground cumin
2-3 tablespoons quick oatmeal (optional)
Put water in a large pot, add boullion cubes, onion and potato, cover and simmer for 15 minutes, until potatoes are soft.
Add all the vegetables, salt, pepper and cumin, cover and simmer for at least 1 hour.
If you want a thicker soup, add the oatmeal.
Enjoy.

Quick Tomato Soup
1/2 Can Tomato Paste/ Tomato Puree
1 chopped medium onion
1 bay leaf
1" cinnamon stick
1/2 cup milk/ 2 TBSP heavy whipping cream
2-3 Cups water
1 tbsp olive oild
salt & pepper to taste
Method:
1. heat olive oild in a pan.
2. add cinnamon stick and bay leaf to it.
3. add onions.
4. Fry till they are soft and tender
5. add tomato paste/puree.
6. add water and mix it well.
7. Add milk/cream stirring while you are ouring milk/cream.
8. Bring to a boil.
9. Boil for 5- 10 mins. If the soup is too thick aa more water.
10. Add salt and pepper. Garnish with fresh chopped corriander leaves on top.
11. Serve with hot bread.

You just toss what you have in there.
If you've got meat with bones, that gives the soup base the most flavor.
Potatoes will thicken it.
If you've got meat and not much else, just throw the meat in there and add salt to taste.

try boiling the beef, pork, or chicken or any meat you have to make your own broth. then remove the meat and add onions, garlic, apple (trust me), celery (if you have any), carrots, and you pasta. add salt to taste and remove the vegetables and the apple then transfer back the meat. viola, a soup! top with chopped parsley and serve with toasted bread. hope i helped! =)

chicken and sweet corn soup. i chicken breast chopped up put it in the pot with about 6-8 cups of water boil add 2 tins of creamed corn chopped spring onion,salt and pepper when its boiling add a whisked egg and stir yummy.
