Depends on what type of sausage you are looking to make...Italian, Spanish....etc. If you're looking at classic Italian, "sweet" style has onion powder, garlic, fennel, salt and pepper as sort of a basic blend. "Hot" style obviously has chili flakes added to the mix in place of the fennel, although I suggest leaving the fennel in.

Experiment with your favourite spices though, sky's the limit....how about a Curry sausauge, or a Bengali 5 spice? If you use what you like, you should end up with a favourable result

Don't forget the fennel seeds.

Sage and paprika, or garlic and fennel. Either is good.
