Some of Madhur Jaffrey's cookbooks have EXCELLENT translations. Tarla Dalal's cookbooks are pretty decent in this regard too, but Jaffrey is better, most of the time.

any cook book of Indian recipes has a glossary with english names for commonly used spices & like ingredients.
