First off, you need to begin eating a variety of foods; if you only eat salads and mashed potatoes, you are going to end up being one of those few "sickly vegans" meat eaters love to stereotype all veggies as.

Most spaghetti sauces are vegan. I love to make tofu spinach pasta... make a big pot and you can eat for several days. Or use fake meat balls or fake ground beef.

You can find vegan bagles for breakfast, and many grociers now carry vegan cream cheese.

Make bean and rice burritos with salsa and quacomoli.

Get vegan pizza dough, spread sauce, put on all your favorite veggies, some nutritional yeast and some seasoning. You can even find fake pepparoni if you you want.

Just because you're vegan doesn't mean you need to live on a boring, dull diet. You need a variety of foods so that you can get enough vitamins, minerals, protein, fiber, etc.

How about pasta? Boil some noodles and cover them in tomato pasta sauce. I believe Hunt's traditional pasta sauce is vegan.

Also, you can try Simply Asia or Thai Kitchen brand foods. They are microwavable Asian meals, and they have a few varieties that are vegan. They taste great. You can get them at health food stores or regular grocery stores (even Wal-Mart).

Boca has vegan burgers; find some vegan buns (I think you can even find some at Wal-Mart. If not, health food stores should have some.) and add some ketchup, mustard, alfalfa sprouts, and shredded lettuce.

French fries make a quick meal (the brand Ore Ida has great fries) for when you don't feel like cooking but you want something hot at home.

Sandwiches should be easy. You can also buy vegan canned soups.

You should also eat rice. I love white rice with refried beans, salsa, and shredded lettuce. I like eating brown rice with vegetables. I cut up some veggies (either broccoli, green beans, asparagus, cauliflower, cabbage, or anything else) and fry them up with some chopped onions, add a bunch of curry powder, then eat them over some brown rice.

Health food stores like Whole Foods, Wild Oats, and Trader Joe's have so many vegan meals you won't know what to eat first. You can find lots of vegan frozen meals, plus desserts, chips, boxed meals, etc. Try some "ethnic" foods for something different.

You should do some research online and find some vegan recipes. It's nice to be able to cook up a nice meal and share it with your family or friends (or eat it yourself and save the leftovers for later on in the week). Also, find out what is and is not vegan. If you're mainly eating salads and mashed potatoes (which may not even be vegan, depending on who's making them), you're missing out. Also, be sure to take a multi-vitamin.

1] Slice up some mushrooms, potatoes, tomatoes, zucchini, and onion.
2] Season with salt, pepper, garlic powder, and italian spices.

3] Throw into some tupperware or a microwave-safe covered dish and toss to mix around the spices. Refrigerate. [overnight is great because it allows the spices to be absorbed by the veggies]

4] Microwave for 5 minutes or so, depending on how much you have. Remove and let sit for one minute when the potatoes are as tender as you'd like.

5] Enjoy a delicious, FAT FREE, tasty meal.

I was a vegan for four years. Some of my favorites were vegan pancakes, stir fryed veggies, bean burritos with vegan cheese, stuff like that.

Go to a natural foods store. They have so many options for vegans. Google the internet for recipes as well.

I mostly eat that stuff too. But as being a vegetarian, I try to extend my variety.Rice,beans, pasta,fries, macaronni salad, chesse pizza,soup, corn, many more.Alot of questions here are the same. Look at those.

so you know all about the basics -- pasta, rice, potatoes, salad, veggies, peanut butter etc etc etc etc.

i'll just add that if you take the time you can have just about anything (as long as you read ingredients, and make appropriate substitutions).
like choc chip or banana pancakes, vegan cakes, no-cheese pizza, cupcakes, cookies, and fudge, veggies hotdogs and fries, sloppy joes w/ veggie ground round, homemade soups and stews, grilled cheese, mac & cheese, PB toast or bagel........ be creative sometimes, plain others

As I even have elderly I even have found out to love cabbage in all types. Stir-fried, with rice and vegetables. large source of fiber additionally. that is surprising with fried rice and Dungeoness Crab. Sandwiches too.

Get some red potatoes, cut them into bite-sized cubes, boil them, drain the water, and then fry them in some olive or flaxseed or whatever oil you vegans use, and season with red pepper, cinnamon, oergano and basil.

Oh, and get some egg beaters and make fritatta.
