If you've got time the easiest thing would be to make one. One possibility is to use banannas and berrys instead of sugar - try using a large bannana, 4oz margerine, 4oz self raising flour, and 2 eggs - creme the bannana and marg. add the eggs and beat hard untill it starts to be less lumpy and separated, then sieve and fold in the flour - bake for about 25mins at 180c. A really low fat option would be to make your own mirangue using sweeteners instead of sugar - sandwhich 2 with low fat yoguhrt (total 0% greek yoguhrt also has no added sugar) and strawberries/raspberries etc. in the middle and on top which will look nice and be v low fat and carbs (berries are really low carbs as fruit goes). If you wanna be indulgent and are not worried about fat but just want something low sugar/carb. you could use whipped cream with either of these - pile it in between and on top of the sponge or mirangue, mixed or topped with fruit, or for a slightly higher carb option melt v high coco % chocolate - this is actually pretty low in sugar - and fold it into whipped cream; using a mold put in a v thick layer over your cake or mirangue base and put it in the fridge for a couple of hours and it will set - remove the mold (eg. use a deep cake tin - eg. an xmas cake tin) and you will have a low carb choc fudge cake kinda cake (without the fudge but same kinda textures!).

I was diagnosed as Type II several months before my 50th birthday. BUMMER! My daughter made me a cake solely out of fruit. She layered 3 kinds of colorful melons, and decorated it with strawberries, blueberries and kiwi. She put it together with toothpicks and served it with low fat, lemon yogurt. It was not only beautiful but delicious. Even that has to be eaten in moderation, of course. You might try your local market if it's a big store and see if they have any low sugar cake products you could bake. There was an answer that said you do have to be careful with those, too, and I have found that as well. When it's my birthday now I just have a tiny piece of whatever treat has been provided and am careful about the rest of my diet for a few days. It's not that a diabetic CAN"T have sugar, it's just empty nutrition.

I made a sugar free Christmas cake...never again. It gave evryone really bad wind and an upset tummy. Just get a normal cake (un-iced or remove icing) and go easy on it.

I know Thortons do a range of diabetic chocolates and they also make up cakes for occasions so i assume they may make diabetic ones too...worth giving your local Thortons a ring!!

Don't bother
They tend to be only slightly less sugar. and can have laxative affects due to the substitue sugars
Better to just eat less of a proper cake.
