Here is one of my favourite recipes - even though it is vegetarian ;)
LASAGNA WITH ZUCCHINI, RED PEPPER AND MUSHROOMS
Preheat oven to 350 F (180C). 13”x9” (3L) baking dish spray with non-stick vegetable spray
9 pre cooked lasagne noodles
1 tbsp veg oil
1 ½ tsp crushed garlic
1 c chopped zucchini
1 c onion
1 c diced sweet red pepper
1 c sliced mushrooms
2 c tomato sauce
540 mL (19 oz) crushed tomatoes
1 tsp dried basil
1 tsp dried oregano
1 ½ c 2% cottage cheese
½ c 2% milk
½ c grated Parmesan cheese
8 oz shredded mozzarella cheese
In large nonstick skillet, heat oil; sauté garlic, zucchini, onion, red pepper and mushrooms until softened, approximately 8 minutes.
Add tomatoes, sauce, basil and oregano; cover and simmer for 15 minutes, stirring occasionally. Meanwhile, in food processor, combine cottage cheese, milk, and Parmesan cheese. Set aside. To assemble, arrange 3 noodles in bottom of baking dish.
Pour 1/3 of sauce over top. Pour half of the cheese mixture over top. Repeat layering once. Top with remaining 3 noodles.
Pour remaining sauce over top; sprinkle with mozza cheese.
Bake, uncovered, for 30 minutes or until hot. Let stand for 15 minutes before serving.

Anyone can make a mistake with an order. Do you think they intentionally gave you food that had meat in it and placed a hair in it so you would have a bad day? Take it back and ask for your money back. Then go eat at a real vegetarian restaurant and order what you really want to eat and forget about eating at places that served you the wrong food = )

Why not do a pasta dish like alfredo or a marina sauce or a baked pasta dish with lots of cheeses and sauce MINUS meat serve a nice salad, some crusty bread and if shes old enough a nice bottle of vino.

Vegitarian egg rolls. Vegitarian pizza. Spanish rice. Also many dishes at a chinese restaurant are vegan and I'm sure they get the question of what is and isn't all the time. You could probably have a party at a chinese restaurant or just get the buffet, ( less work ).

Greetings ! This website has alot of cool easy food ,what you may find out also is most like to prepare there own food anyway ,you may want to findout what she likes and get the products and let her assembly them herself . Yay.. ok hmmm...
I dont know if she likes Pasta, but you could make vegetable fettucinni alfredo... yummy....
OR if its going to be casual, barb q and go buy her some tofu burgers.. they are realllly good....

make a vegetarian lasagna :) unless she is vegan, then make a mexican theme meal with beans and rice (seasoned of course..and you can cook them in the same pan as the peppers and onions i mention later on..) lettuce, salsa, guacamole, cooked red peppers and onions (in olive oil). oh and tortillas.

a delicious finger food:
chop up a bunch of jalapenos, mix with cream cheese then spread on tortillas. roll it up and cut it into bite sized rolls. mmm.
