Rice and beans combined are a great source of protein.
Nuts, especially almonds, contain great proteins and healthy oils.
Since meat is an important source of iron, you'll need to eat lots of dark green veggies like spinach and broccoli.
Fellafel is a good source of protein, are many whole wheat and whole grain products.
Morningstar Farms has a great selection of soy based meat substitues. They'd be in the freezer case, either together, or with the meat they're supposed to be. Careful though, while they're all vegetarian they are not all vegan.

If going vegan, some things you should know: Gelatin comes from animal bones, so it's NOT vegan (technically, it's not actually vegetarian). Some white sugars are refined with animal bone. You'd be really suprised how many foods contain animal products - you will definately need to read a book on the subject to find out what ingredients contain animals.

Many nuts, legumes, and other plants contain protein. But beware meat, eggs, and dairy are a complete source of protein it contains the other 9 amino acids your body cannoth produce. These alternatives don't contain all essential amino acids so make sure to eat a varied diet of them.
