Ok...Let's see...
I have a super simple meatball recipe:
2 bags of Armor meatballs (original, not italian style)
2 cans (or one of the big cans) of cream of chicken soup (sorry Thad)
1 16 oz container of sour cream
Heat the meatballs a little in the oven, then throw them in a crock pot with the other two ingredients. You'll love them...they're unbelievably good.
Here's my cold taco dip recipe..always a huge hit and no cooking involved. Use a plastic or glass platter, since bean dip will "react" with a metal platter.
2 cans of frito lay bean dip (or something similar)
1/2 cup mayo, 1/2 cup sour cream, and one package of taco seasoning....all mixed together
Lots of cheddar cheese
Layer it as listed...garnish with onions, black olives, salsa, sourcream....or anything else taco-y that you can think of.
Ok...now for a snack....

They are SUPER DOOOOOPER good. Just cut down on the oil a bit and put them in a paper bag in the fridge overnight.

blt dip
fry 1 lb. of bacon til crisp. Drain on papertowels. In a bowl mix 1 c mayo, 1 c sour cream, 1 large chopped tomato, then add the chopped bacon an chill over night. Serve with Ritz Crackers. Tastes just like a BLT.

You'll please everyone with this one:
STROMBOLI
2 frozen bread loaves
1 lb. Mozzarella cheese
1/2 lb. chipped ham
1 lb. hamburger or sausage, browned
Small pkg. pepperoni
1 green pepper
1/2 onion
1/2 lb. fresh mushrooms
Or use whatever you like on your pizza (even a vegetarian one if you're into that)
Roll out dough long and narrow. First pile cheese down center, then other ingredients on top. Pull up sides and pinch together. Grease pan; put seam of stromboli on bottom. Make slits on top for steam, place them where you will make slices. Bake at 350 to 375 degrees for 30 to 45 minutes. Makes 2 large stromboli.

Some people may still be paying attention to their New Years resolutions so be sure to have some low cal/low carb snacks. Fresh veggies cut up to dip is always nice. You can have a light ranch dressing dip and a Velveeta/salsa dip. I would suggest celery, carrots, broccoli, cauliflower, olives, peppers, etc. Another option is fresh fruit with low cal caramel dip. Apples, pears, papaya, mango, bananas.

7-Layer Dip w/Tortilla Chips
Mix 1 package of Taco Seasoning with 8 ounces of Sour Cream.
Layer 1: Spread 1 can of refried beans on the bottom of a round platter.
Layer 2: Top with taco seasoning/sour cream mixture.
Layer 3: Top with shredded lettuce
Layer 4: Top with shredded cheese
Layer 5: Top with chopped black olives
Layer 6: Top with diced tomatoes
Layer 7: Top with diced mild green chilies (canned)
Chill until game time then serve with Tortilla Chips...I promise it will disappear!

We always have cream cheese ham rolls at EVERY get together. I can never make enough of these things!
Ingredients: The amounts will vary depending on how many people you plan to have...
Ham (like lunch meat... not really thin since you have to spread cream cheese on it)
Cream cheese, softened
Green onions
Directions:
Lay a slice of ham on a cutting board, and spread a thin layer of cream cheese all over the slice of ham. Cut a piece of green onion the width of the slice of ham and place it on one edge. Roll the slice of ham up around the onion, and cut into 1 inch lengths.
You will definately want to make lots of these since they go really fast. Even the kids here love them!
