My only pointer is that desserts are usually overdone. Try a good caserole, a hot one since it's winter. Here's a good, easy one.
Cornbake
Just mix all the ingredients and spread in a standard 13X11 baking pan and put in the oven at 350 for about 45 minutes (I usually check it then , but it usually needs to go a little longer)
1 box Jiffy Corn Muffin mix
2 eggs
1 can cream corn
1 can sweet corn (drained)
8 oz sour cream
When it's close to done, I usually sprinkle some sugar on top of it and let it bake that way for the lase few minutes. If I don't, I add it to the mix (just a couple of tablespoons).

Casseroles are usually good for that. We had a potluck at work and I brought crunchy potatoes. They were a huge hit!! Recipes is as follows
1 32 oz. bag of Obrien Potatoes
1 chopped onion
1 stick of butter melted
1 can cream of chicken soup
1 8 oz. container of sour cream
1 c. shredded cheddar
some crushed corn flakes
Mix potatoes, onion, soup, sour cream and cheese in a large baking dish. Spread out evenly. Layer the top with crushed corn flakes. Pour the melted butter over the top and bake at 350 til hot and bubbly. They are delicious!!

Chili or Tater-Tot Casserole are good choices. If you're really stuck for ideas, why not pack along a few bottles of pop and/or juice with plastic glasses? Having been to a few potlucks in my time, I have noticed there is usually not a lot of variety in the way of liquid refreshments.

Usually, too many people bring salads or sweets. I would go for something like a quiche or a savory pie. A quiche lorraine, onion tart, chicken pie--can be warmed in a sec and even cold they are delicious. If you're not up to the work you can always buy a frozen crust as long as it is not sugary.

Baked Ziti is always a good option. It feeds alot of people, is inexpensive, tasty and easy to make. Cook your pasta until it is just short of Al Dente, add your tomato sauce, some ricotta cheese and parmigiana, put it in a baking pan and cook @ 350 for 45 min...you're all set!

Brownie pizza. Bake a batch of brownies on a pizza pan for 20 minutes (let coo). Then mix cream cheese and chopped pineapple and layer it over the brownies. Slice up strawberries and bannanas and put on top of cream cheese (like pizza toppings) run a few lines of chocolate syrup on top. Optional: Crushed nut on top.My wife got the recipe from Pampered Chef and it is awesome!

I ALWAYS bring a tray of cheese cubes and a variety of crackers, and a tray of veggies and dip. It might seem very common but everybody eats it up, and it's finger food that isn't messy to transport, or to eat. Buy the bricks of cheese and cut up your own veggies, and you'll find it is very inexpensive. I also buy the pre-made cookie dough that you break apart and bake, and they are always eaten right up. (All 3 of these trays could be less than $20 total)
