Chicken enchiladas.... Boil 3-4 boneless chicken breasts with a half a packet of taco or soutwest seasoning. Once the chicken is cooked pull it out and shred it. Mix a little green enchilada sauce with the chicken. Spoon chicken mix into flour or corn tortillas and roll up. Place them all in a casserole dish and sprinkle with cheese. Bake until browned and bubbly.
I use a big can of green enchilada sauce, I dont know the brand. Check out the mexican food section at the grocery store.
Serve with tortilla chips and salsa. Sourcream is good as a topping. A salad would be nice too.

1 lb ground beef
1lb favorite macaroni, I like cavatappi, elbows, or shells.
1 large can whole tomatoes
Salt
Cook pasta according to package directions. In large skillet, brown onions and meat together. Leave in the drippings. Add a can of tomatoes and crush slightly with spoon. Heat thoroughly. Add drained, cooked pasta to skillet and combine. Add a little water if not wet enough. Salt to taste. Simple and goes a long way!

Wild Rice Chicken
INGREDIENTS
2 (6 ounce) packages uncooked long grain and wild rice
2 cups cooked, cubed chicken breast meat
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4 ounce) jar diced pimento peppers, drained
1 onion
1 cup shredded Cheddar cheese, divided
DIRECTIONS
Preheat oven to 300 degrees F (150 degrees C). Prepare rice according to package directions.
In a medium bowl, toss together the cooked chicken, prepared rice, soup, pimientos, and onion. Transfer to a lightly greased 9x13 inch baking dish. Stir in 1/2 cup of the cheese, then sprinkle the other 1/2 cup of cheese on top.
Place in preheated oven briefly, to melt.
Greek Grilled Cheese
INGREDIENTS
1 1/2 teaspoons butter, softened
2 slices whole wheat bread, or your favorite bread
2 tablespoons crumbled feta cheese
2 slices Cheddar cheese
1 tablespoon chopped red onion
1/4 tomato, thinly sliced
DIRECTIONS
Heat a skillet over medium heat. Butter one side of each slice of bread. On the non buttered side of one slice, layer the feta cheese, Cheddar cheese, red onion and tomato. Top with the other slice of bread with the butter side out.
Fry the sandwich until golden brown on each side, about 2 minutes per side. The second side always cooks faster.
