It all depends on how "fancy" you want to look and what your budget is but here are some ideas :
Try making some "montaditos" which are a smaller version of "tapas".
You can buy Smoked Salmon, Philadelphia Cheese, capers, Olive Oil and over one cracker/cookie, spread the cheese, lay a small portion of the salmon, pour some Olive oil on top and add a couple of capers. These could work as an appetizer. For the main course you could prepare a tray with slices of different kinds of ham, pepperoni, spanish chorizo, roast-beef, etc and on a different tray lay out different types of cheese : Gouda, Emmental, Manchego and give everyone the chance to prepare his/hers own sandwich. Have Mayonnaise, Mustard, green jalapeño peppers, black olives and perhaps sun-dried tomatoes on the side for everyone to pick from. To drink (considering your guests are adults), offer them different options like Red wine, beer, or even mixed drinks. Believe me, I've done this before, and the good comments kept on coming !!

I think the idea of finger foods is great!
You can pick up all kinds of frozen stuff now...from egg rolls to poppers to wings. You can also make stuff too, but I think that at a birthday party, especially for young ones, people are not there for dinner.

How about mini Pizzas on the grill? I use pita bread for the crust and make individual pizzas all the time. It is fast and the kids can put on their own toppings and have fun with it.....Pita bread is inexpensive and has about 8 pitas per package. I buy the ones that aren't sliced or pocketed. Just a thick pita bread.

I'm assuming you're talking about a kids birthday party. Make some subs. Get a bunch of different cold cuts, fresh veggies, sub sauces and different kinds of mayos and mustards (depending how old they are for different mayos and mustard's), cheese bread or multi-grain bread sub buns. Subs can be healthy and everyone can make what ever kind they want.

how about a taco/fajita/burrito bar? ....ground beef, shredded chicken, rice, beans then of course tortialls or shells and all the the toppings...lettuce, cheese, sourcream, salsa...guacamole? We did this for a bday party and the guests LOVED it..they could just help themselves. You could do pizzas...or spaghetti..or both for an italian twist =) Hope this helps.

mini pizzas, u could get the lil boboli crusts and whatever kinda toppings the kids like, u could get marinate some teriyaki chicken skewers over night and grill them the next day,

have a make your own taco party
chips & salsa(put in a sombrero)
then along with the birthday cake you can also have a make your own sundae bar set up with all kinds of sprinkles & toppings.

nachos, put out dishes with all the ingredients and they can decide what they want on them (cheese,meat,salsa,sour cream, guacamole,refried beans) you can make kebobs, tacos, shrimp alfredo(use short cut noodles) or egg rolls, costco sells this great orange chicken thats very easy to make
