I _like_ soy, tamari, sesame oil, etc, but just once, it'd be nice to have a stir-fry that wasn't an unsavoury shade of brown.

Any suggestions for non-chicken-stock (etc) vegetarian stuff I can dump on?

It had not occurred to me that I might be abusing soy sauce. Hmm.

A bunch of good ideas already! You could add Turmeric to add a yellow hue to things. If you can handle the spice there are all those Korean Chili oils and the like. Spike isn't really oriental flavor but is good and doesn't end up extremely brown. How about the 'other' colors of Miso? What veggies are you using? The sauce may be brownish but in my dishes the colors of the veggies normally overpower that. Green from the peas, cabbage and scallions along with white from the rest of the scallion plus water chestnuts and firm tofu tossed in just before service. Reds and yellows from ripe peppers. Purple from eggplant. Yellow from squash. I use highest heat and the veggies just get cooked until they 'light up' and there's only just enough brownish sauce to lightly coat the veggies. Am I missing something here? I feel I'm being rude but it's not my intent at all.

Thanks for letting me know the answer doesn't sound rude! It still looks off to me but I don't know why or how to 'fix' it.

Saute in fresh garlic, cilantro, basil. Basically you can add any type of spice to your stir fry. Also try if you can find it is Emerils asian essence. It is a little on the spicy side, but does not color the food and adds some great flavor. Good Luck

you can waterdown your soy sauce, and or add some sugar water, to balance out the salt from the soy sauce

i use soy sauce on everything so, i don't know anyother sauce, wish i can find a non soy sauce, sauce

Stirt fry in vegetable stock and chopped garlic.

you can add garlic, onion, parsley, basil, curry, lemmon or lemmongrass, or any other spice of your choice.
Oriental cooking uses huge amounts of parsley, onion, garlic lemon and different kinds of curries.
