Just about any veg can be eaten raw, but the health benefits of some are questioned by raw vegans. First, try to stick to these qualities: Organic; Raw; Fresh: Ripe... and then pick the veggies that are most colorful and flavorful.... choose kale over raw potato; choose romaine over ice berg lettuce; choose almost any veg over RAW mushrooms. Now, get out there and have fun learning which ones you really like! Green smoothies are a delightful bridge... just combine your favorite fresh, juicy, organic, raw, ripe fruits with a tender green (kale, chard, romaine, etc.) in a blender.... vitamins and minerals and great flavor!!!

All vegetables can be eaten raw, and in most cases they taste better raw. Plus when you boil them you take out most of the nutrients.

Most vegetables can be eaten raw but a little heat (stir-fry) definitely enhances the flavor and may improve the texture.

Just about all...
cabbage ( which is really cole slaw raw), spinach (salads), carrots , green beans, peas, broccoli , you name it.... Think about some of the salads on the salad bars. All those veggie are not cooked. What about the 7 layer salad - all veggies not cooked. Its natural, grown from the ground, you can eat raw.

seriously i think that you can eat them all raw my fav is carrots they are so good i love them with a little bit of ranch oh my and they are good for your eyes to make a roast and put all kinds of veggies on there good luck on answers : )

just about all of them except potatoes, turnips and such they are too difficult to digest. also try jicama...it is really good and can be eaten plain or used in dips or cooked, in salads...it has a nice, mild, sweet taste and is crunchy. low to no calories and good for you.
