In the morning, slice some Tempeh on the diagonal. The bigger the space the more absorption.
Put the tempeh in 1 cup veggie broth with about a tablespoon of each of Vegan Worchestershire and Bragg's Aminos

When lunch rolls around, grill the tempeh. If you don't have one of those lovely little Foreman Grill thingies then just use a skillet. I love my little Foreman grill!
Once the tempeh is nice and toasty, put your sammich together.
Grill the bead with tempeh and cheese til the cheese is melty. If I'm really hungry I add avocado AFTER it's grilled.

This is absolutely delish!
~Artichoke and Basil Hero~
*1 cup firmly packed fresh basil
*1/4 cup olive oil or salad oil
*2 tablespoons grated Parmesan cheese
*1 tablespoon capers, drained
*1 tablespoon white wine vinegar
*2 teaspoons Dijon-style mustard
*1 clove garlic, quartered*1 (16 oz) loaf French bread
*1 (14 oz) can artichoke hearts, drained and sliced
*4 ozs provolone cheese, sliced
*1 medium tomato, thinly sliced
*2 cups fresh spinach
1) IN a blender container or food processor bowl, combine the basil, oil, Parmesan cheese, capers, vinegar, mustard and garlic. Cover; blend or process until nearly smooth. Set aside.
2) Cut bread in half lengthwise. Hollow out each half, leaving a 1/2 to 1 inch shell. Spread the basil mixture over the cut side of each bread half. On the bottom half, layer artichoke hearts, cheese, tomato and spinach. Cover with bread top.
3) To serve, cut sandwich crosswise into 6 pieces.
Start to finish: 25 minutes
Serves: 6
Nutrition facts per serving: 396 calories, 17 g total fat, 14 mg cholesterol, 887 mg sodium, 46 g carbohydrates, 15 g protein
{On a side note, I actually eliminate a lot of the ingredients like the mustard, vinegar and capers. It still tastes wonderful!!}

Black Bean and Rice Burgers
1 (15 ounce) can black beans, rinsed and drained
1 cup cooked brown rice
1 small onion, finely chopped
1 egg, lightly beaten
6 tablespoons salsa, divided
1/4 cup reduced-fat sour cream
4 lettuce leaves
4 slices reduced-fat Cheddar cheese
4 hamburger buns, split
DIRECTIONS
In a large bowl, mash beans with a fork. Add the rice, onion, egg and 2 tablespoons salsa; mix well. Drop by 1/2 cupfuls into a large nonstick skillet coated with nonstick cooking spray. Flatten to 1/2-in. thickness. Cook over medium heat for 4-5 minutes on each side or until firm and browned.
In a small bowl, combine sour cream and remaining salsa. Place a lettuce leaf, burger, sour cream mixture and slice of cheese on bun.

Avocado, Tomato and Rocket Pannini
Ingredients
1 Panini roll or baguette per person
1/2 avocado per person, sliced
1 large tomato per person, sliced
Rocket
You can either use a Panini roll and grill it or use a baguette and use a griddle pan.
Slice the roll in half and put a layer of tomato slices, then a layer of avocado slices and then some rocket. Then another layer of avocado and another layer of tomato
If you are using a Panini roll pop it under the grill until golden brown and then turn over carefully and toast the other side.
If you are using a baguette, lay on a griddlepan and press down hard with a metal spatula until it has dark brown stripes. Then turn over and repeat on the other side.

I make this sandwich that its really healthy and yummmmi
Tomato slices
Fresh mushrooms.
wheat toast
olive oil
just spread all this on the bread & add little olive oil
Add some salt & pepper - for the taste- then grill it
It taste so good

Celery and houmous!
One stick of celery chopped up really finely and mixed with about a tablespoon dollop of houmous between two slices of white or brown bread. No butter or anything else added.

Lots of great options! I like to start with a multi-grain bread and cover both pieces with humus. Then add the salad fixings to your own preference... rocket, lettuce, tomatoes, onion, cucumbers... mmmmmmMMMmm!!!!

We call it 'Cheese Paste".
It's basically your favourite cheese (we usually use cheddar) combined with mustard, butter and a little hot sauce and mixed until it forms a paste. Mmmmmmm....good
