i want to become a vegetarian, but i dont really know how to start. I havent really heard of any really tasty vegetarian meals either.

So if you have any suggestions or recipes, then i would be appreciative. :)

Ever hear of Falafel? It's a Middle Eastern thing - balls of fried chickpeas on a pita, with some lettuce, other vegetables, and delicious garlicky sauce. That is the most amazing vegetarian food ever.

But you can make lots of your favorite foods with veggie options. Vegetarian lasagna is amazing, and you can make it with spinach and tofu. There doesn't have to be meat anywhere. Also, lots of Chinese and Indian recipes are vegetarian due to religious beliefs in those countries. They are flavorful and super-filling. Do some research into that.

www.vegkitchen.com is great. also, go to the local barnes and noble or borders and look there. there will be lost of options for cookbooks and books on the basics of vegetarianism. There are really tasty meals for vegetarians! And some great meat substitutes that are better tasting and better for you than meat products. It's all about the spices and flavors you use - you won't miss the meat if you use lots of good flavors!

There are MANY very tasty recipes in the magazine "Vegetarian Times" magazine!

Also there are TONS of books with veggie recipes, even at the library.

I think often times veggie recipes are even more tasty because they don't rely on the flavor of animal flesh. (not meant to offend meat eaters that may read/post here).

go to you local library and browse the vegetarian cookbooks.. you'll be sure to find
something you like or go to your book store or health food store and ask for the best vegetarian cook book! I like Fanny Farmer's
Veggy Deal book best! here's a simple fake meat recipe: canned pumpkin, oatmeal, wheatgerm, soya sauce, mix all together shape to either patties or balls and cook in oil!

my personal favorite is fettucine pasta with alfredo sauce and maybe some garlic bread on the side. you can add flavorings or vegetables to the alfredo sauce if you want and maybe a salad as well. delicious and vegetarian and easy to make =). also check out http://www.vegcooking.com/ for more suggestions, it has tons of good foods.

Black Bean and Rice Burgers

1 (15 ounce) can black beans, rinsed and drained
1 cup cooked brown rice
1 small onion, finely chopped
1 egg, lightly beaten
6 tablespoons salsa, divided
1/4 cup reduced-fat sour cream
4 lettuce leaves
4 slices reduced-fat Cheddar cheese
4 hamburger buns, split
DIRECTIONS
In a large bowl, mash beans with a fork. Add the rice, onion, egg and 2 tablespoons salsa; mix well. Drop by 1/2 cupfuls into a large nonstick skillet coated with nonstick cooking spray. Flatten to 1/2-in. thickness. Cook over medium heat for 4-5 minutes on each side or until firm and browned.
In a small bowl, combine sour cream and remaining salsa. Place a lettuce leaf, burger, sour cream mixture and slice of cheese on bun.



Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Start slow, stop eating meat gradually and start subsituting more veggetarian food into your diet and you should be fine it's a not a like oh now i'm a veggetarian it's a major lifestyle change, and needs time to be eased in. peta.org has some good one's in their starter kit.

In the superstore, fruits are usually chosen much too soon. Some are rocks, many are wrong. Some of the fresh vegetables are right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
