Ramen was more of a comfort food for me while I lived in Japan. Good for that midnight snack after a night out drinking. There are three main soups available at most ramen places, shio(salt), shoyu(soy sauce) and miso (fermented bean paste). Each ramen place usually has a huge pot of chicken stock and one of the above three ingredients are added along with noodles, some bbq pork, green onions and various other small items.

Even though I lived in Sapporo, which was famous for miso ramen, I preferred Kyushu style or Okayama style ramen more. Kyushu ramen uses a pork bone based soup instead of chicken, called tonkotsu ramen. Okayama ramen uses a soup that is somewhat like Chinese hot and sour soup.

Where ever you go, the best way to make sure you get a good bowl of ramen is to go to a place where there are a ton of people, because that means it'll be worth the wait.

It's really good. It does not compare to the garbage out of the package. However they serve it boiling hot and you have to eat it fairly fast.
