Please something that isn't too hard, I have never tried to cook it before but I enjoy it very much.

Lemon Chicken
Use 1 chicken breast/person
Cut chicken in large bite size pieces. Dip in beaten egg (with a tsp of water/egg added), then dip in bread crumbs. Let stand 10 min. Sauté in olive oil on 6 or 7 heat until cooked and golden brown.
Sauce:
Mix 1/4 cup sugar, 1/2 tsp cornstarch, 1/2 cup water. Microwave until boiling, stirring twice. Add a pinch of salt and mace. Add 1 tbsp butter and juice of 1/2 lemon (about 2 tbsp). Stir. Cook 20-25 seconds. stir. Pour sauce over chicken. garnish with lemon slices.

Steamed fish
nice fresh firm fleshed fish like sea bass, pollack, flounder. use the whole fish scaled and cleaned (don't cut off the head or fins)
"wash" (marinade in a flash kind of thought here) the fish inside and out with a good rice wine (Shaoxing is used but sherry makes an acceptable substitute)
Shred very finely about a 1/4 cup each of fresh ginger and scallions.
Place fish on a plate in steamer (can use large pot and place plate on some marbles or something similar) and place shredded ginger and scallions on top. Steam until fish is done (depends on side of the fish but 20 minutes is average) Don't turn the fish over.
In the meanwhile in a small pan heat about 2 tablespoons of plain peanut oil until almost smoking. Turn off and a teaspoon of soysauce and add a drop or two of dark sesame oil.
Remove the cookled fish (with the shredded ginger and scallions) serving on the plate it was cooked on (don't want to lose the juices) and drizzle the cooked oil mixture over the fish.
Watch it disappear:)

Make some Ma Po Tofu (spicy tofu). Cut a block of firm tofu into cubes. Fry some ground pork until no longer pink, add some diced scallions and crushed or chopped garlic and fry another minute, stir in a few spoonfuls of Sichuan hot bean paste (chili bean paste - toban jiang), add tofu cubes, mix gently and heat through. Add a little water if it seems too dry. Serve with white or brown rice. Note, hot bean paste is very spicy and salty, so be careful how much you use.

There are many more complicated recipes but I make it like this and it turns out great!

A friend sent me this recipe today. It sounds like it is easy to make.

ANTS CLIMBING A TREE (aka, Spicy Pork with Bean-Thread Noodles)

In this classic Chinese preparation, delicate, clear bean-thread noodles are dressed with a spicy sauce and flecked with bits of pork — the "ants" of the dish's curious name. I’ve adapted this recipe from Gourmet magazine.


INGREDIENTS

For marinating the pork

3/4 pound ground pork

2 teaspoons rice vinegar

2 teaspoons soy sauce

1 teaspoon Asian sesame oil


For main dish

8 ounces bean-thread (cellophane) noodles (available at Asian markets)

2 tablespoons vegetable oil

1/2 cup thinly sliced scallion

3 tablespoons minced garlic

1 tablespoon minced peeled fresh ginger

2 teaspoons Chinese chili paste or 1/2 teaspoon dried hot red pepper flakes

1 1/2 cups chicken broth

3 tablespoons Chinese rice wine or mirin

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sugar

2 teaspoons Asian sesame oil

STEP 1:

Marinate the pork by combining the ground pork gently with the vinegar, the soy sauce, and the sesame oil and let it marinate in a small bowl at room temperature for 20 minutes.

STEP 2:

In a bowl, soak the bean-thread noodles in warm water to cover for 15 minutes, drain them, and cut them into 3- to 4-inch lengths.

STEP 3:

In a wok or large heavy skillet, heat the vegetable oil over moderately high heat until it just begins to smoke and in it stir-fry 1/4 cup of the scallion, the garlic, and the ginger for 30 seconds. Add the pork and the chili paste and stir-fry the mixture, breaking up the lumps, until the meat is no longer pink. Add the noodles, the broth, the rice wine, the soy sauce, the vinegar, and the sugar and simmer the mixture, stirring occasionally, for 3 to 5 minutes, or until the noodles have absorbed the liquid.

Transfer the mixture to a platter, drizzle it with the sesame oil, and sprinkle it with the remaining 1/4 cup scallion.

Serves 4.

This is really great and delicious.

2 eggs, beaten.
About 1 1/2 cooked rice, heated.
Ketchup and scallions, if desired.
Salt and pepper, to taste.


Heat a medium skillet under medium heat. Pour the beaten eggs in the skillet and move the pan around. The egg should cover most of the skillet. Fry the egg until it is completely done. (Note: If plain eggs are too bland for you, add some salt to it while it is frying.)

Turn the egg onto a medium-sized plate. Put the rice on half of the egg. Take the other half of the egg and cover the rice. Add ketchup and scallions, if desired.

Chinese Noodle Chicken
"This is a quick, easy, healthy meal. Add a salad and light dessert and you are sure to get rave reviews. My family asks for this meal at least once a week."

INGREDIENTS
4 skinless, boneless chicken breasts
1 tablespoon vegetable oil
1/2 cup sliced onion
2 cups broccoli florets
2 carrots, julienned
2 cups snow peas
4 cups dry Chinese noodles
1/4 cup teriyaki sauce
DIRECTIONS
In a large skillet brown chicken in oil, stirring constantly until juices run clear.
Add the onion, broccoli, carrots and peas. Cover skillet and steam for 2 minutes.
Add the Chinese noodles and teriyaki sauce. Stir noodles into chicken/vegetable mixture, making sure they are coated with sauce. When the noodles wilt, serve.

Chicken Fried Rice

1/2 tablespoon sesame oil
1 onion
1 1/2 pounds cooked, cubed chicken meat
2 tablespoons soy sauce
2 large carrots, diced
2 stalks celery, chopped
1 large red bell pepper, diced
3/4 cup fresh pea pods, halved
1/2 large green bell pepper, diced
6 cups cooked white rice
2 eggs
1/3 cup soy sauce
DIRECTIONS
Heat oil in a large skillet over medium heat. Add onion and saute until soft, then add chicken and 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes.
Stir in carrots, celery, red bell pepper, pea pods and green bell pepper and stir-fry another 5 minutes. Then add rice and stir thoroughly.
Finally, stir in scrambled eggs and 1/3 cup soy sauce, heat through and serve hot.
