Pork Gyoza
Authenitic Japanese recipe for these delicious dumplings! Your going to love this one. Don't forget the sauce!

1/3 cup cabbage, chopped and boiled
1/4 cup carrots, shreaded
2 tablespoons green onions, chopped
1/2 lb ground pork, cooked
1 teaspoon sesame oil
1 teaspoon sugar
2 teaspoons soy sauce
1/2 teaspoon fresh garlic, grated
1/2 teaspoon fresh ginger, grated
20 gyoza skins
2 tablespoons vegetable oil
1/4 cup water
Combine all ingredients other than oil and water in a bowl and mix well by hands.
Place a teaspoonful of filling in a wrapper and put water along the edge of the wrapper. Make a semicircle, gathering the front side of the wrapper and sealing the top.
Heat oil in a frying pan. Put gyoza in the pan and fry on high heat for a min until the bottoms become brown. Add 1/4 cup water in the pan. Cover the pan with a lid and steam the gyoza for a few minutes on low heat.
Serve warm with gyoza sauce. Can be found in Asian food stores.

Pork Gyoza (Japanese Pork Dumplings)
Ingredients:
1/2 lb (225 g) ground pork
1/2 cup (125 ml) bok choy, finely chopped (or broccoli)
1/2 cup (125 ml) sui choy, finely chopped (or cabbage)
3 tbsp (45 ml) light soy sauce
1 tbsp (15 ml) peanut (or vegetable) oil
3 tbsp (45 ml) garlic, finely minced
2 green onions, minced
Salt and pepper to taste
1 pkg round gyoza (or wonton) wrappers
1 egg whisked with a little water
Peanut or vegetable oil for frying
For Dipping Sauce:
2 tbsp (30 ml) soy sauce
30 ml rice vinegar
Hot sauce (optional)
Directions:
1. In a mixing bowl, combine the ground pork, bok choy, sui choy, soy sauce, oil and garlic. Season well with salt and pepper. You can cook a spoonful of the mix in a small frying pan to test the seasoning
2. On a clean flat work surface, place a gyoza wrapper and brush edges with the egg mixture. Place a small spoonful of the mixture in the centre. Fold over the wrapper and press gently to remove all air trapped in the middle. You can make small decorative pleats (tiny folds) along the edge to make an attractive finish. Set aside on a tray and continue with the remaining wrappers and filling
3. In a large pot of boiling water, drop a few handfuls of dumplings in the water, cook 2 - 3 minutes or until the dumplings float. Remove with a slotted spoon and transfer to a second tray. Repeat with the remaining dumplings
4. In a large non-stick skillet over medium-high heat, add a little oil and fry dumplings in batches until golden brown. About 1 - 2 minutes per side. Transfer to a serving plate and repeat with remaining dumplings
Serve warm with dipping sauce and a little sauce on the side

Pork gyoza is basically a Japanese dumpling that's been fried in a skillet with oil.

It is a dumpling, either fried or steamed that has a pork filling. They are delicious!
