I am making chili cheese fries for 20 people but with their appetites it is more like 27 people. I am planning this for my sons 2nd birthday party as the meal. How much would you think I would need to buy of each thing to have enough? Anyone use other stuff on their chili cheese fries other than chili, fries, and cheese?

I would consider making a huge pot of homemade chili. If it is being used for a topping then you should be able to get away with one recipe. (Double it if you want, if there are leftovers you can freeze it.)

Shredded cheddar cheese, I imagine 2-4 lbs would do it.

For the base I imagine two of those large (pillow size) bags of crinkle cut Oreda's would suffice. Bake them until they are crisp and then keep them hot in aluminum roasting pans. You could also offer small bags of Frito Lay chips so that people can make their own Frito pie. (Open the bag, top with chili and cheese)

You could make a big spread with various toppings for the fries or the Frito's. Diced, fresh tomatoes, green onions, diced white onions, sour cream, lettuce and tortilla chips for those who want to go the taco-salad route.

The chili you could make one or two days ahead of time too :)

As a cute serving idea, check into party stores to see it you can find those red and white gingham paper baskets. You know the ones you get at the fair or the bowling alley with chili cheese fries or nachos in them. This would help with portion sizes, if you give some people a 9 inch plate, they feel they have to fill the entire plate with french fries, and go on from there. Maybe even those plastic baskets lined with parchment paper would work well.

20 pounds of potato's a large bottle of cooking oil 5 large cans of Hormel chili.5 pounds of cheese and a pint of milk.Make sure when you microwave the cheese you add a little milk so it don't turn into glue .Experiment on the right consistency.You should have plenty and a good time.Have fun.

Try adding some sour cream to the side as well...chili and sour cream usually goes well.
