Stuff I liked when v. small:
A weird thing with a slice of wholegrain bread rolled flat, covered with cheese spread, covered with alfalfa sprouts, rolled jellyroll-style. I used to beg for that somewhat ridiculous-sounding 'treat.' You can take a sharp knife and cut it into little round slices, too.
Apple and cheddar slices.
Dried fruit.
Granola w/yoghourt.
"Peanut butter balls"-type no-bake cookies.
A sliced banana topped with toasted wheat germ and milk.
Cold noodles -- egg, rice vermicelli, soba.

Young children need the protein in meat in order to grow properly. You being a vegetarian is your choice, but forcing your child to be one isn't fair, especially since children need the susbstances in meat to have a healthy balanced diet.
