I bought some broccoli at the supermarket yesterday, today I noticed it wasn't as firm as it usually is. Its a little rubbery when I try to break it apart. It looks perfectly normal - a nice dark green color.

that's still edible.. that's the level when they put it in the reduced bucket or basket.. I often get from the basket.. I always take the greenest from that reduced basket. Avoid the yellow ones they are too tough and won't absorb the water! Also watch out for those sneaky stores that dye the yellow broccolli a nice green colour.
If U never seen broccolli in that store as dark as U see in the reduced basket then it's a sure bet that it's been dyed green.. walmart has been known to do this! zigglers too, food warehouses also!

It just means that it has wilted alittle. It maybe a little dehydrated, so put it in a sink full of cold water for 20 minutes or more to see if it soaks the water back up into the head of broccoli. It also may be old and has dehydrated to the point where it won't soak any water back up.

well if it´s still green it should be fine but even if it´s slightly yellow on top it´s okay to eat best to steam your broccoli . I find it has all it´s flavor that way.
