Be creative, anything that YOU would think to be good probably will be. For me, when I think of quesidillas i would think to fill it with chicken, red peppers, sauted onions, jalepenos, cheese...anything you want. Then for dipping, salsa and sour cream. Experiment. You could also go with a theme and make them have something like a taco flavor, by seasoning your chicken to your favorite taste.

A little chicken with roasted vegetables like green or red peppers and red onions. You can roast them in the oven or over the flame of a gas burner and then peel off the darkened layer. Add some colby jack and mozarella cheese and youve got a great quesadilla.

One of my favorite foods!
There are a few really good options. (cheese on all of these...depends on your taste, Naco blends, monterey jack, swiss, smoked gouda are a few of my fav's)
Find a great refried bean recipe...guacamole, sour cream,and tomatoes broiled
How about spicy? My hubby likes to have his with sundried tomatoes, chicken that has been doused in hot sauce and stir fried with some hot peppers (banana are the least spicy but you can go really spicy with Jalapeno, or habanero)
Beef is also really yummy...try with a red wine sauce and saute...

The most common things you find in quesadillas here in Mexico are mushrooms, cuitlacoche-sometimes spelled huitlacoche- (corn mold), fried pork rind/skin, squash flowers,tinga ( sort of like pulled pork, beef or chicken barbecue with chiplotle chile sauce) or Mexican manchego "style" cheese. Real cheese with flavor to it is very interesting also.Mashed beans referred to in USA as "refried beans" and boiled ham are also popular items.

I never make them. I have a Bar and Grill make mine. I always have them put chicken/cheese/black olives/jaljpeanos and put Tabasco suace on every bite, thats if you can habdle the fire. Not so fun the next day, but it's still a good drunk food.

Green Pepper and Onion Quesadillas (lacto)
·1 large green pepper
·1/2 large red onion
·1 and 1/2 cups grated cheddar cheese
·4 flour tortillas
·Butter for cooking
·Salt and Pepper
·Sour cream
·Salsa
Serves 4.
Chop green pepper and onion and set aside. Add 1 tsp. butter to skillet set on medium high heat. Add green peppers and onion to skillet and saute vegetables until onions are slightly translucent. Salt to taste while sauteing. Transfer vegetables to plate and set aside. Still over medium high heat, generously butter skillet and place tortilla in skillet. Place half of cheese on tortilla and spread out evenly to edges. Place half of vegetable mixture on top of cheese. Generously butter one side of second tortilla and place butter side up on top of vegetables. Cook for approximately 1 minute (until lightly browned). Using large, preferably rounded, spatula turn quesadilla over and brown on other side. Set aside in tin foil and prepare second quesadilla. After cooking, stack quesadillas and cut in quarters with pizza cutter for best results. Serve as an appetizer with salsa and sour cream.
