I was wondering if there is a good way to cook vegtables without loosing all the nutrients and with some sort of seasoning?

I got so sick of steaming.

You can sautee in olive oil (or any oil). First, add chopped onions. Then add the vegetables. Then add the garlic. Season with salt & pepper. Saute until desired doneness.

You can also cut into pieces which are basically the same size. Lay pieces out on a cookie sheet. Drizzle with olive oil, sprinkle with salt & pepper. Kosher salt and freshly ground pepper are best, but if you don't have, it's fine too. Place into a preheated 350F oven. Cook until desired doneness. I fill up the cookie sheet and bake for 25 minutes. Mmmmm, lovely!

You can also brush them with oil and grill them. Season them with any spices/herbs you want, regardless of the cooking method.

You can try sauteing them in a white wine and add a dash or two of basalmic vinegar. Depends on the type of veggie you're cooking. I like the balsamic vinegar with cabbage, asparagus and sometimes green beans. It can be added after steaming as well.

I'll also add a little garlic powder to some vegies during or after cooking - usually with a little butter.

Stir fry with a lil olive oil in a wok.
Dont overcook to retain flavour and crunch.
Veggies like cabbage, cauliflower, broccoli, peas, onions, bell peppers, carrots make a cool stir fried dish.
Cut all into strips. Fry cauliflower and carrots first, in about 2 tbsp oil. Add salt and black pepper to taste. A lil soy sauce is good too and a tbsp of vinegar.Add other veggies and cook further for about 5 min. Cover the lid and steam for another 3 min.
Voila!

Steaming is a good option. A touch of olive oil and some salt and pepper and perhaps a nice seasoning (Mrs. Dash is one) or herbs of your choice. And you can use any type of liquid to add an additional layer of flavors, such as beer or wine.

Roasting is also good. Season as above and roast on a cookie sheet covered with foil. 350 degrees, time varies with type and cut of vegetables.

Grilling is also an awesome way to fix them! Use the Grill or a grill pan and get those great carmellized sugar grill marks on them. Oil and season as above.

Cole Slaw....Tastey, yet nutritious...

INGREDIENTS

3 cups shredded cabbage
5 plum tomatoes, seeded, chopped
1 cup fresh broccoli florets, cut into small pieces
1 cup cauliflowerets, cut into small pieces
1/2 cup chopped red onion
1/2 cup fat-free sour cream
1/4 cup reduced-fat mayonnaise
1 tablespoon cider vinegar
3/4 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS

In a bowl, combine the cabbage, tomatoes, broccoli, cauliflower and onion. In a small bowl, combine the sour cream, mayonnaise, vinegar, salt and pepper. pour over cabbage mixture; toss to coat evenly. Cover and refrigerate until chilled.

Nutritional Analysis: One serving (3/4 cup) equals 84 calories, 5 g fat (1 g saturated fat), 7 mg cholesterol, 402 mg sodium, 10 g carbohydrate, 3 g fiber, 3 g protein. Diabetic Exchanges: 2 vegetable, 1 fat.

I usually prefer it steamed or
you can boil it for just a few minutes
then get a bowl with ice and cold water ready.
Then that way you "shock" or stop the cooking and
still maintain the bright colors of your vegetables.

boil a pot of water, drop the veggies in, take them out after a min. then season with a little bit of salt and pepper, and 1 -2 tbs of extra virgin olive oil

sprinkle with olive oil...add loads of butter...ur fave seasoning..any kind of seasoning u like.. and bake them..it'l turn out delicious and healthy
