Don'ty bother with a book they can not possibly cover the rich variety of food in the Caribbean. Try putting the phrase "Caribbean Recipes" into a search engine and enjoy.

Try any of Angela Spenceley's Caribbean cookbooks. She has written a series of cookbooks from the Caribbean. I have "A Taste of Puerto Rico" and love it. Lots of authentic recipes and it is easy to follow. You can find her books at these sites.

try getting a copy of the real jerk, popular restaurant in toronto, they might have a website so check it out, the food is apparently really good there, and i know they have a recipe book out
