You need very thinly sliced beef or pork. In Asian markets the meats labeled "for sukiyaki" will work. Shabu-shabu is best cooked at the table. Get a gas or electric table top burner, fill the donabe halfway with water, and boil it right at the dinner table. Arrange the meat raw on a tray, and prepare a tray of accompanying vegetables, such as hakusai cabbage, enoki mushrooms, and green onions.

When the water is simmering, pick up the meat or veggie with your chopsticks and cook it lightly by swishing it in the water. The Japanese sound-word for this swishing is "shabu-shabu", hence the name.

Each diner should have a small bowl with a mixture of raw egg and ponzu (a mix of soy sauce and citron juice available at Asian groceries). Dip your shabu-shabu in the mixture before eating. I do not care for raw egg, so I usually use only ponzu for dipping.
