Good and accurate answers all around. As has been pointed out, much of China lies in regions where rice grows well. Also, in the north, there is quite a bit more wheat and barley eaten in the form of noodles and steamed breads.

Potatoes are native to the Americas, so it's no surprise that a 3000 year old culture would not have them in their culinary tradition. Also, the traditional Chinese kitchen does not include an oven, so baked breads as we know them in the West were unknown.

Mostly it is because the climate conditions where their previous generations lived was conducive to growing rice (a swamp grass), There are areas in china where wheat (a drier grass) was grown, and noodles were made there, There is no reason you can't eat rice or noodles all the time, but If you pay attention to your asian co-workers, they also eat fish, and meat and vegetables, which you need for the vitamin content of a healthy diet

There is nothing wrong with eating rice. I love eating rice. When people say that Asians eat rice, I do not think its a stereotype. Its like saying that Americans eat nothing but fast food 90% of the time is a stereotype. Its not becouse its true. America has the highest obesity rate than any other country, maybe if Americans ate more rice and less fast food perhaps obesity rates would go down.

Why do American people eat hamburgers a lot. Or french fries. etc. They eat it because it's part of their culture. Probably because they grow a lot of rice in China. Probably because that is a crop that grows well there. There isn't any reason why you couldn't eat rice and noodles all the time. Take advantage of the concept called "trade". That's why Chinese people get to eat hamburgers, too.

Ei, not only Chinese, most Asians like me (Filipinos) used to eat more than 1 cup of rice in a single meal. We, but not necessarily all of us eat that much. The main reason is that we are accustomed in eating until we feel that there's not enough space to stuff our stomach! funny isn't it? We'll one time, and this is real, I saw a typical Asian laborer who's got this big appetite and easily devoured a mountain of rice on an foot diameter plate in one eating session. That's a lot of energy to burn for the day!

In the actual country of China, people have to eat rice a lot because this is the major food that is available to most people (China is so crowded they don't have as much room for growing food, so rice is a main staple). This is a part of their culture, so many continue to eat rice as a main food source, even when they have different varieties of food available.

Think about the food you eat most often. If you were to go elsewhere, like to China, wouldn't you still want to eat this food?

Because of the traditions and their culture....
Besides, why is it bothering you that much if Chinese people eat rice a lot? Do they shatter your world by eating rice a lot? Do they make you unhappy by eating rice a lot? What's your problem here? Everyone has their own favorite food to eat, you too have it. Be open minded.
Let Chinese people do or eat whatever they want to, even to eat s*ht, as long as they don't bother you or make you unhappy by it. Leave them alone by eating rice. Try eat rice yourself and you'll know how does it feel! :D Instead of eating unhealthy cancerous typical American hamburgers... Rice is healthy, low cost and yummy....

Actually in some parts of China they don't eat as much rice as you would think. There are not many starches in their diet, this is one of the few.

In some parts of China the diet is mainly vegetables and seafood. Think about it, if you need carbohydrates and starches, what do you eat? Rice is native to the area and is more common.

Seriously though, the food in most Chinese restaurants is much different than the food there. It has been "Americanized" for us.

Rice is the predominant grain crop in China and India because of the hot, wet summers. It's all about climate. In areas with warm, dry summers and cool springs, wheat is the main crop. Carbohydrate is the staple of most food cultures. Wheat, rice and corn are the 3 big ones.

Chinese like rice, here, America, potatoes, some countries pasta. It is a culture thing. And now with so much travel its mix and match. We pretty much all eat all of it. But, since i have had Asian cooks they do prefer to serve rice more than pasta or potatoes. I must constantly remind them. I am not Asian, i like potatoes as much as you like rice. I am pleased with having a variety.
