I believe you can make masala dosa pancakes (Indian cuisine) with gram flour and rice flour.
Mix them up with water. The gram flour (chickpea) acts like egg as it binds the other ingredients.
Sorry I don't recall the exact recipe. When we returned from India we experimented and found that these were the basic ingredients. Very tasty, too.
You can also use barley, rye and oat flour for baking bread much as you would use wheat flour.

Egg Free Banana Bread
Ingredients:
2 1/4 cup gluten free flour mix
1 tsp baking powder
1 tsp baking soda
1/2 tsp xantham gum
1/4 tsp salt
1/4 cup safe margarine
3/4 cup brown sugar
2 egg replacers (1 heaping Tbsp Ener-G egg replacer + 4 Tbsp water)
3 large, ripe bananas
1-2 Tbsp water
Instructions:
1. Preheat oven to 350 degrees F.
2. Sift dry ingredients together.
3. In mixer bowl, cream margarine and brown sugar.
4. Whisk together egg replacer mixture.
5. Add 1/2 dry ingredients, alternating with 1/2 wet ingredients.
6. Blend well after each addition.
7. Add well mashed banana and mix until thoroughly blended. 8. Add additional 1-2 Tbsp water if batter seems to dry (this will likely depend on size and ripeness of bananas).
9. Pour into well greased 4X8 loaf pan.
Bake for 45 minutes or until tests done. Cool slightly in pan before removing to rack to cool completely.
(I was not sure about xantham gum and food allergy. I looked it up:.It is formed when sugar is fermented by the bacteria Xanthomonas campestris. It is used as a thickener, stabiliser, and emulsifier in many dairy products, desserts, and salad dressings. No side effects.* )

sorry, I can't give you an exact recipe but dosa's are way better if you make the batter like they do in India, basically you soak equal parts black gram and rice sperately over night, in the morning rinse them and then grind with some water - then ends mixture should be about as thick as crepe batter but bteer to leave it a bit thicker and add water later. So anyways, after you have ground them it needs to sit and ferment for about 12 hours, then adjust the consistency and make like you would crepes - if you want masala dosa then you but curried potatoes inside, mmm mmm good - or skip all the hard work above and buy Gits dried dose mix from an indian food shop

Try this Pakora recipe. These are Indian fried patties and they are delicious.
Mix chickpea flour with Indian graham masala, chili powder and salt to taste. Add enough water to make a batter with the consistency of pan cakes. Add a pinch of baking powder or baking soda to make it light. Chop some coriander, onions and a mixture of your favorite vegetables and add to batter. Mix well and let it rest in the fridge for a short time. Heat the oil in a deep fryer. Drop your batter into the hot oil one tablespoon at a time. Remove from oil when the patties become golden. Drain excess oil on paper towel. Server hot with mango chutney.

Can you eat rice?? long grain or short grain or wild rice. If the answer is yes, you may try this one.
<<<<<< Chicken & Mushroom Rice >>>>>>> serves 2
400 g Chicken thighs, cut into bite size
2 slices ginger root, slices thinly
4 dried shitake mushroom, soak in hot water till soft
200 g Jasmine rice (or any long grain rice)
1 can of chicken soup (for cooking rice)
water (for cooking rice)
1 teaspoon sesame oil
Chicken Marinade
1.5 tablespoon oyster sauce
1/4 tablespoon salt
1/2 teaspoon sugar
1 tablespoon cooking wine
1 teaspoon garlic power
1 teaspoon corn starch
1) Drain the mushroom, put 1 tablespoon of cornstarch mix with mushroom, lightly massage mushroom with fingers (this is a easy way to wash away the dush and dirt), wash away the cornstarch, slice mushroom in 2 mm thick slices
2) Wash rice and cook with a electrical rice cooker, follow the instruction to adjust water level with chicken soup.
3) Marinated the chicken pieces with oyster sauce marinade for 15+ minutes
4) When rice is nearly done (you see the water is bubbling on the surface of rice but still soggy) before the switch popped up, spread chicken pieces and mushroom slices on top of the rice quickly, cover it as soon as you can.
4) Let it steam for about 15 minutes after the switch popped up or till the chicken is cooked.
5) Drizzle sesame oil on top of chicken rice.
6) Serve with boiled vegetables.
