Lasagna
* 9 lasagna noodles
* 3 cups tomato paste
* 4 cups stewed tomatoes (drained)
* 4 cups 2% cottage cheese
* 1/2 cup thinly sliced mushrooms
* 1/2 cup finely diced green bell peppers
* 2 1/2 cups chopped spinach (optional)
* 9 large slices of mozzarella cheese
* 1 egg (scrambled)
* 2 tbsp basil
* 2 tbsp oregano
* 1 tsp garlic powder
* 1 1/2 tsp sugar
* 2 tbsp parsley
Preheat oven to 400 C. Add spices, vegetables (except spinach), sugar and tomato paste to stewed tomatoes and cook in a sauce pan (this is only done to soften the green peppers). In another bowl, mix cottage cheese and chopped spinach.
Boil noodles and drain. Coat noodles in the scrambled raw egg.
Start layering in an ungreased pan:
* 3 noodles
* tomato sauce
* cottage cheese (mixed with spinach)
* repeat ...
End with:
* noodles
* mozzarella cheese
Bake, uncovered, for 20 minutes or until sauce is bubbling. Let cool for 5-7 minutes. Slice and serve.

Cottage cheese is a cheese curd product with a mild flavor. It is drained, but not pressed so some whey remains. The curd is usually washed to remove acidity giving sweet curd cheese. It is not aged or colored. Different styles of cottage cheese are made from milks with different fat levels and in small curd or large curd preparations. Cottage cheese is a favorite food among bodybuilders for its high content of casein protein while being relatively low in fat.

Baked Noodles and Cottage Cheese Casserole

Makes 6 Servings


3/4 cup Hood Cottage Cheese
8 oz. (equal to 4 oz. raw) noodles, cooked al denté
1/4 cup Hood 1% low fat milk
1 Tbsp butter, melted
2 Tbsp chives, chopped
1/2 tsp garlic, minced
Salt and pepper, to taste
1 1/2 Tbsp bread crumbs
Paprika, for topping

Cook the noodles al dente and cool to room temperature.
Place the cooked noodles into a bowl and toss with 1/2 cup of cottage cheese, milk, melted butter, chives, and garlic. Season this mixture with salt & pepper to taste.
Spray an 8 x 8 inch baking dish with nonstick cooking spray lightly on the bottom and sides.
Place the noodle mixture into this dish and top with the remaining cottage cheese spreading this evenly from end to end.
Top this evenly with breadcrumbs and top this with paprika for color. Spray this lightly with some nonstick spray.
Place this into a 400°F oven for 20 to 30 minutes.

Serving Suggestion: Serve separately in a casserole or as an accompaniment.

Baked Schrod with a Cottage Cheese Crispy Crumb Topping

Makes 8 Servings


8, 6 oz. scrod filets, cut thin
1 cup Hood Cottage Cheese
1 cup bread crumbs
4 tsp lemon juice
22/3 cup potato chips, crushed
1/2 cup butter, melted
3 Tbsp chives, chopped
3 Tbsp parsley, chopped

Preheat oven to 400° F.
Place all of the ingredients for the topping in a bowl and mix well. Reserve in the refrigerator.
Cut the filet of schrod almost in half horizontally leaving one side uncut.
Unfold the filet and place 1/4 cup of the topping in the slit.
Place fish on a baking sheet, and bake for 10-12 minutes.
Bring to a gentle simmer, stirring occasionally.

Serving Suggestion: Vegetable and grain, such as peas, carrots, and roasted potatoes or rice.

I like cottage cheese along with cheddar cheese in a baked potato. Its also nice with a salad.

Do you mean cottage cheese or panir? They are not the same. The latter is a type of 'farmer's cheese'.
Gee, I pointed this out because I noticed the asker is from India, and in India farmer's cheese is commonly referred to as cottage cheese which is NOT the same as what we know as cottage cheese.
