Gouda, maybe? Any slightly tangy cheese would be good -- even cream cheese.
What's really good is just fresh asparagus with butter -- or steamed asparagus with a little soy sauce! Save the cheese for some nice, crusty, whole-grain bread to go with the asparagus. Yum!

Hopefully your fondue pot came with a little cook book or something. If not, get one. Raw meats need to be cooked in a broth or oil fondue, not cheese. Filet, chicken, shrimp, all good, just depends on your taste. If you really want to have a full fondue dinner, your best bet is to have 2 pots. Start with cheese for appetizers Then the other pot is liquid based to cook meats/vegeys Then clean the cheese one and fill with a chocolate fondue for dessert and dip pound cake, cookies, berries, etc. Fondue is awesome, have fun.

You can use Cheddar, mozzarella, Gouda, blue cheese, and any cheese to are willing to try.
