it depends on what you consider "exotic"
in Canada those would not need exotic ingredients

I think if you look at most cuisines of the world, you will find ingredients that are used all over. Examples off the top of my head are chicken, garlic, onions, potatoes, cabbage, etc.

Sure, some recipes may have more exotic spices/ingredients, like ones for Thai, Indian or Provence dishes. But you should be able to find basic dishes that aren't too "crazy". May often be called "country" or "peasant" style dishes (ex. "Country French").
