Any fruits or veggies. Meatless soups and pasta or rice dishes. Allrecipes has a vegetarian page, browse through to get some ideas: http://allrecipes.com/Recipes/Vegetarian/Main.aspx

I eat just about everything except meat, fish and eggs...don't think there's nothing left but tofu. Tofu isn't all that great and you don't need as much protein as you might think; meat-eaters get too much protein and they're the ones who make up the so-called dietary tables and estimates for how much protein is needed. Anyways, eat FRESH fruits and vegetables; milk is a miracle food and you don't want to kill the cow, you may know what they have done to the cow, cannibalizing them creates mad-cow disease.
Eat rice; white rice is OK; baked potatoes are cool in the micro-wave. I love broccoli, carrots, potatoes for a nice repast; offer the meal with love and devotion to Krishna.

try to eat food with a lot of spices in it so that you won't miss eating meat. Indian food is a great vegen food and taste great. They use a lot of spices and you won't miss the meat. Try it for a couple days and you won't go back to meat again, friend. Tofu, if you know how to cook it right with spices, you won't be bored with it. You can do a lot with it. Email me if you want some tofu recipes, sreysrahw@yahoo.com. Also, try Asian grocery market, they have variety tofu. Here in Houston, there's this place call Tofu ltd. they make variety of tofu, you won't go bored with it. It's matter of spices in the cooking. Try tofu with lemon grass herb, tofu with red pepper flakes fried up and dip with soy sauce/sesame seed oil, tofu egg-roll, it matter of creativity. Go shop some place you don't usually go and you'll be suprise what other culture eat. It's fascinating and fun to taste all the different food from other countries. What other place can you do it beside living in the great country of USA. You basically have other countries right in your door step. Be bold.

Of course, there are tons of things to choose from. Eat fruits like apples, grapes, and pears. Eat veggies like peas, carrots, and potatoes. Try rice, bread and yogurt. Drink lots of milk to build strong bones so you wont be weak from not eating meat. If you are going on a diet try Echinatia tea, it is an old tea that is usually never recognized, but keeps you from colds, and you sweat off the pounds within 3-4 days! But for now, just stay away from Pork, Chicken, Beef, Turkey and other meats!! Hope I could help

Everything! Except meat, broth and gelatin. Eat everything you normally eat, just without the meat. Replace meat with beans.

=) EVERYTHING and anything that's not a dead, rotting animal, basically. Look around your local grocery store. It takes a while to see things in a light different from 'oh god, where is my cheeseburger?!',but you'll come around.
