Hawaii offers many different styles of luau, from a formal sit-down dinner, to an all you can eat buffet. The two main dishes served in traditional luau style are Kalua Pig, roasted in an underground oven called an Imu, and Poi, a purple-colored paste made from the root of the taro plant.
Other traditional dishes include Poke (marinated raw fish), Lomilomi salmon (a salad of salmon mixed with tomatoes and onions), long rice, Haupia (coconut custard), many different kinds of salads, Polynesian sweet potatoes (purple flesh), rice dishes and a variety of other delectable foods including steak, chicken and fish. And of course, one of our favorites, taro rolls with macadamia nut butter.
Mai Tai's are the official drink of the Hawaiian Luau, but luau punch is also served for those who want non-alcoholic beverages.
Luau-goers are usually overwhelmed with the number of scrumptious desserts served at a traditional Hawaiian luau. Desserts include freshly baked cakes, pies and breads, as well as fresh island fruits. Try delicious coconut cake, pineapple chiffon cake, guava chiffon cake, banana bread, carrot cake, macadamia nut desserts, fresh pineapple, guava, papaya and mango, just for a start.

Remember the lea's, the pina colatas, Bread, and the good old stand by, potato salad.
A fruit salad would be great but mangos cost a lot this time of year, and rarely are they ripened to the sweet taste they normally have. Chips, dips, and cheeses make a good side.
Veggie platter (at least 3 on the table) with raw veggies such as celery, carrots, brocolli,ect. Have a great Party!!

Hawaiian Cole Slaw:
INGREDIENTS
4 cups shredded cabbage
1 (11 ounce) can mandarin oranges, drained and liquid reserved
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon white pepper
1 cup crushed pineapple, drained
1/3 cup mayonnaise
DIRECTIONS
In a large bowl, toss together the cabbage, 1 tablespoon of reserved orange juice, salt, ginger, nutmeg, and pepper.
Toss the oranges and pineapple into the mixture. Stir in mayonnaise until evenly coated. Chill well before serving.

Pineapple Stuffing (great w/ chicken)
INGREDIENTS
1 (15.25 ounce) can crushed pineapple, drained
1 (5 ounce) can sweetened condensed milk
1/2 cup white sugar
12 slices white bread, cubed
3 beaten egg
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch glass baking dish with vegetable cooking spray.
Stir together, drained pineapple, milk, sugar, and eggs in a large bowl; mix well. Gently fold bread cubes in, until well moistened. Pour mixture into prepared dish.
Bake in preheated oven until lightly golden on top, 25 to 30 minutes.

Pineapple Rice
INGREDIENTS
1 3/4 cups pineapple juice
1 tablespoon curry powder, or to taste
1/2 teaspoon celery salt
1 cup uncooked jasmine rice
1 tablespoon butter
DIRECTIONS
In a 2 quart saucepan, bring pineapple juice to a boil. Stir in curry powder and celery salt, and then add rice and butter. Stir until butter melts and rice does not stick together. Reduce heat to low, cover, and simmer for 10 minutes.
Stir rice with a fork to loosen from bottom of pot. Simmer another 3 to 5 minutes, or until done.

Pineapple ham and rice
INGREDIENTS
2 cups cooked rice
2 cups cubed fully cooked ham
1 (20 ounce) can crushed pineapple, undrained
1/2 cup packed brown sugar
1 tablespoon lemon juice
1 teaspoon ground mustard
DIRECTIONS
In a bowl, combine all of the ingredients. Spoon into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350 degrees F for 25-30 minutes or until heated through.

I did breadfruit (whole, wrapped in foil) on the barbecue at my last luau, but one dish which is always a big hit is coconut rice. It is so easy - you just cook rice as normal, except use coconut milk/coconut water instead of normal water. Best seasoned with a little salt and pepper.

My bestie had a hawaiian party, and she had:
ham & pineapple pizza, fruit kebabs,
and little decorative umbrella & stuff like that..
When the guests enter, you could give them a flowerery necklace thingy and say: ALOHA!
